I love this video! When my husband and I were young, we lived in Minnesota, which is in the Northern US. We did a lot of camping and canoeing. We also foraged and my favorite find was always fiddleheads. It is so fun on a canoe trip to be able to have fresh vegetables. So thanks for sharing your fist experience of making "green velvet" soup and reminding me of those great adventures of my past.
Thanks Viv for bringing nettle soup back into fashion. It's one of my favourites , just weed and feed. Most would eliminate them, yet once, they were regarded as a valuable crop. Samuel Pepys loved nettle porridge. Mary Queen of Scots, found sheets of nettle linen superior to that of flax and Sir Walter Scott said nettles grown under glass were an excellent substitute for spring kale. I also use chickweed in sandwiches, dandelion in salads....eat the weeds.
Cheers lovely.......I thoroughly enjoy my 'free' food.....nettles, dandelions, Good King Henry etc.....if I had a bigger garden I would grow a whole patch of nettles! :-)
Yay! A new video from Vivi! The last three days have been solid school work and your and Sean's videos have been getting me through the drudgery! Granted, I would probably be done by now if I was concentrating more on the school work but, it wouldn't have been tolerable without some gardening inspiration to break it up!

Go to Neal's Yard Dairy (and surrounding area) for the best cheese and next door is the pharmacy........bottles and bottles of herbs; Borough Market (on the south bank)......great food and drink market, finish with a pint at the George on Borough High Street (oldest galleried pub in the world)....and so on ad infinitum. I love this city called London!!!!!!!! For countryside/coast it has to be Dorset!

I planted nettle in my garden last year. I am hoping it joyfully spreads all over so I can harvest some for tea and to add to soups. The soup you made sounds wonderful and I will be making it. I love the blouse you're wearing. Very pretty!
The past couple of years I've heard lots of people say that the protein combining/complete protein problem is a myth. Our bodies cleverly combine the proteins for us, even if they're not eaten in the same meal. Will be worth looking into more for up to date research. I wonder if there's something on nutritionfacts... I don't bother combining proteins, never have. Been vegan 2 years, and vegetarian before that for 25 years. Really enjoyed the recipe vid, been wanting to make nettle soup for years! The problem of finding clean nettles is real!
Yes, getting them clean is the main problem - I'm lucky to have access to a pristine patch! The protein combining issue will be interesting to follow up....... :-)
Vivi, welcome to nettle family. Every year we do salads with nettles, also do soups, baked potatoes with nettles. And what we can not be missing is fresh nettle tea. There are so many recipies.
just put those nettles into quite a salty water for at least two hours. Take out and use in a salad. Or put them into a boiling water for one minute. Then also we stuff our chicken with nettles before baking, but Vivi doesn't eat meat, so I did not talk about that.
I remember as a child eating lots of wild greens. Our yards were weed free due to the harvesting of them in the spring. Wild berries also. I don't know if you eat them but beet root tops are fantastic also as a green. luv ya Vivi you;re so down to earth and just a lovely lady!
Vivi, wow, nettle soup. It looks a lot like split pea soup. So many variations could be made with this soup. I'm a soup person. I could eat soup every day. It's a complete meal in the bowl. I started a few years ago here in zone 5 {Upstate NY} even though all the books say they grow best down south. They grow great! And what I love is that because they are only distantly related to regular potatoes, sweet potato leaves are edible and delicious. Love your cooking videos- keep up the great work! XOKK

And those are all delicious (though the mallow is a 'green' taste). Do you have room in your freezer to blanch and freeze some nettles for future soups? You're adorable. Like a kid a Christmas who discovered another present hiding behind a branch. A new 🍜. I am so glad that you liked it. I know where some grows that should be ok to eat. I'll see if I can find them. We've never had them in the garden. We have picked miners lettuce, young malva( cheeseweed), and purslane. All quite nice. Purslane sautéed in olive oil with garlic and onion or shallot, with a squeeze of lemon is also super yummy. These are how our forefathers survived. It really is too bad we don't all forage more.excellent video. You are so engaging on camera. Can't wait to see what you do next.
I think foraging for freebies is gonna be a great idea for you over this next year. When I first arrived here (in France) I was intrigued by the number of people walking across the fields picking somthing - apparently, they were collecting dandelions (called pis-en-lit ha ha!) for salad/spinach substitues. Then dont forget berries and mushrooms later in the year, and of course Elderflower - champagne, and Elderberry cordial (anti-viral properties for the winter) delish.

I make your carrot and celery soup all the time Vivi. We live next to a nature reserve so have a never ending supply of nettles. I will give this a go soon. 💋
"Umami" is the word you were looking for. The earthy, savory taste. I don't have nettles growing anywhere around me (Western Pennsylvania US), I buy nettle tea and I infuse it in oil for nettle milk soap as well as one of the herbs I use in my all purpose balm. A great plant with many uses. Tami
Nettles go well with perl barley I like to use leeks and mushrums with it but you schould use a lot more nettles as they cook down like spinage and what gives it a real good flavore is 5 or 6 dandilion leaves there is so much free food at the moment if you know what your looking for I like the stems of burdock but will have to wait a little till they start to shoot up
What Vivi did next it was delicious and i did not whizz it up just had it with everything nice and chunky. I got enough for 2 bowls. I plan on doing this again a few times when i have lots more nettles they were just peaking out

I find it makes our soups creamy when i add it, I use it to make creamy tasting soup as well as normal nettle because we cows dairy allergy. Do you find it sort of creamy or is it just me?
Velvet? How about green stingy soup and maybe some spices with it and call it stingy spice soup that's a tongue tied phrase. Sounds wonderfully good and tasty. Wish we had nettles here in south Florida I'd try it for sure.
I love Nettle soup. I doubt too many animals would lift their leg on stinging nettle so it should be pretty safe..it's only nitrogen anyway...Lol! You can trim it back four or five times a year like comfrey and get that much more from the plant. Bon Appetit!

I love it when I can cook a meal and then divide it into smaller portions and freeze. I am not good at eating the same thing for a whole week. I have a shelf in the freezer with small containers of meals for me to eat.
Nettles soup remains me every spring to my grandma, because she cooked it once a week . I like very much, but my family don`t eat it. You can also cook delicius meals or pesto from Giersch - i don`t know the english word - it`s a horrible weed but soo gesund and delicius. Primula veris and Vogelmiere and dandelion leaves are great too. Liebe Grüße aus Schleswig- Holstein!

All their woolen clothes were green (they didn't like the taste much of the soup ). - Vivi, Grow some quick growing green onions, or chives or steal your extra onion greens. Did you say you couldn't trade/barter veggies on your plot? - As far as 'weeds', I enjoy purslane, milk weed buds and sorrel. Id like to try ferns, cattails and ramps. Q: Curious what your views are about soy beans/vs too much estrogen? A lot of people have stopped eating soy sauce, miso and TVP...because of the soy.

The freezer is fairly full from emptying the winter beds........but I might just squeeze some in. ;-)

I have never had nettles, but my mom had them and many other greens as she grew up. One i have had is dandelion and I love it.

Nettles can be dried for tea, not sure if they will be any good for soup after drying though.

Don't have space for turnips......but I do eat the green tops from other veg like beetroot.......great in the breakfast smoothie! :-)

Yes.....very creamy......hence my description of velvet. :-) I don't use cream.....don't need to.....once blended it's super smooth and lush. :-)

Yes.......lots of winter squash soup. Love it.......keeps me going every winter. :-) I think the nettle would work perfectly with spinach instead. :-)

Well, that answers a question I thought about asking, would you try growing corn....lol Are you thinking about put out your recipes in a book or online? Would love them somewhere I can get them to try.
I just want to share the recipes here really......but I keep being nagged to do a book......not sure a publisher would be interested in such very simple home fare...... :-)

- DARE YOU. Who was the person that looked at stinging nettles and thought, "ouch da..m that hurts, think I'll eat that". If you were a fan of Good Neighbors...remember the stinging nettles episode? All their woolen clothes were green (they didn't like the taste much of the soup ).
- Vivi, Grow some quick growing green onions, or chives or steal your extra onion greens. Did you say you couldn't trade/barter veggies on your plot?
- As far as 'weeds', I enjoy purslane, milk weed buds and sorrel. Id like to try ferns, cattails and ramps.
Q: Curious what your views are about soy beans/vs too much estrogen? A lot of people have stopped eating soy sauce, miso and TVP...because of the soy.
