- In this video, I tried to recreate Bonci's Lasagna Sourdough Pizza. Beef ragu' and cheese are layered with flavorful sourdough pizza dough topped with San Marzano tomato sauce, fresh basil, and more cheese. This is a work of art. Period.

Ingredients:
For the Sourdough Pizza
520g Bread flour
400g Water
16g Salt
16g Olive Oil
200g Sourdough Starter
For the Beef Ragu':
250g Ground Beef
1 Carrot
1 Onion
1 Garlic Clove
1 Celery Stalk
1 bunch of Parsley
1/2 Glass of White Wine
2 TBSP Tomato Paste
To top it off:
1 Can of San Marzano Tomatoes
Shredded Mozzarella
Basil
Olive Oil
Side Note: this amount will make two roughly 600 g dough balls. I noticed Bonci's Authentic Lasagna Pizza is thinner, so her dough balls are probably around 500-550g each.

So glad I found your videos, all from checking out other styles of Detroit style pizza makers after falling in love with this Detroit Style. But, no big beautiful bubbles like yours, so I have lots of room for improvement. lol Before Detroit style, had been making a sourdough focaccia pizza. Your photography and video production is wonderful. A lot of work goes into production and post, and it's great to watch. In one of your Roman-style pizza, high-hyd videos you referred to a formula for how much dough to make for a given size pan. I think the algorithm was something like: ".. X x Y x 0.4..", but I'm not sure of the units. I'd like to use a black steel pan about 12 inches by 16 inches (about equivalent to a 1/2 size sheet pan). Could you share the formula again? I must say, your skill at handling wet dough is inspiring. Thanks.
Length x width of the pan x 0.5 (for normal pizza) and 0.6/7 for deep pan!

Thought about it, but it’s already pretty heavy both in the sense of heavy for the pizza at the bottom to be able to rise properly , and both heavy on your stomach 😂
