    I made this! I was brave and when I didn't have what the recipe called for, I used the closest I had or what I could find!
    - In place of Allulose - I had a 450 grams of Monkfruit/Erithritol. I added 50 grams of sugar to get to 500 grams of sweetener. Yes, I know - mine was not as sugar-free as the recipe!
    - I didn't have any cider or champagne yeast, but, I have plenty of SAF Instant Yeast. Thanks to encouragement (see my earlier comment) I did use the instant yeast.
    - I was confused about what to do with the orange, because maybe I missed it on the written recipe, but I definitely forgot what the video said to do. So, I never did use that orange!
    - Finally, since I've never brewed beer before, I don't have any brewing bottles. I used mason jars. I realize that the process is a high pressure process and the bottles are a better guard against bottles exploding, but, to counteract that possibility, I did not tighten my jars too tightly. Yes, it did result in less fizzyness - but, that was OK.
    Otherwise, I followed the instructions and recipe. I love it! It's quite spicy - like REALLY spicy! I'm not certain whether the additional sugar resulted in any alcohol development. I do get a little flushed when I drink it. I call it my Ginger Tonic!
    I'm the only one in the house that likes spicy foods, so, it will take a while to finish this batch. Next time, I'll hope to have actual brewing bottles and will try to stay more true to the recipe. Thank you for the recipe and the encouragement to start brewing!

    My fave kind of ginger beer that is low carb, has disappeared from the shelves. I wondered if I could make a virtually sug free version of my own. Then I watched your video….🎉❤ thank you 🙏

    Can Monkruit/Erithritol work as well as the Allulose for the sweetner component?

      yes but check the amount. Allulose is 1 to 1 for sugar. You may need to adjust that if you are using a different sweetener.

    I not sure but I was wondering if the yeast and lactombacteria needs sugar to feed on?

      No Lacto bacteria in this one as I used ale yeast and only enough sugar to carbonate it. The name is misleading because it's not really a beer. You could let it ferment with table sugar but it would alter the flavor profile and go pretty dry. If you want to make it boozy I would recommend fortifying it with a neutral spirit so you maintain the flavor of it all.

    One more quick question - what do you think about using SAF Instant Yeast? I have a lot of that, and, am finding it hard to come by brewing supplies. OK - another question - your channel name is "NorthWest" but your shirt says Indianapolis - is "NorthWest" a reference to the Pacific NW, or, some other region? I live in PNW - if you happen to know of any brew supply stores near Bellevue, WA, will you let me know? Thanks!

      Instant yeast is fine. It will dissolve faster but give the same result. I've been a big Colts fan for years but I reside in Portland. There are a couple oh homebrew stores up by you but you would have to cross over into Seattle. You can also order from Amazon, Northern Brewer, MoreBeer, or even my local brew store has a webstore at fhsteinbart.com/. I recommend checking how much you have to spend for free shipping and then making a list of supplies you need so you can order enough for free shipping. You can order you grain pre milled or whole if you own a mill.
