Easy Coconut Poke Cake

  • Easy Coconut Poke Cake is the perfect make-ahead, warm weather dessert. This short cut recipe inspired by Tres Leches Cake starts with a boxed cake mix-so easy! But with the addition of creamy coconut milk and decadent sweetened condensed milk, this cake is anything but basic. For best results, soak your cake overnight!
    EASY COCONUT POKE CAKE
    1 boxed white or yellow cake mix (plus ingredients on package for preparation-typically eggs, water and oil)
    8 oz. sweetened condensed milk
    8 oz. coconut milk
    1 8oz. container whipped topping
    ½ c. sweetened coconut flakes
    Prepare cake mix and bake in a 9x13 in. glass baking dish according to package directions. Remove from oven and allow to cool slightly. While still warm, use a fork or wooden skewer to poke holes all over the surface of the cake. (It's ok if it looks a little messy! It will be covered up!) Mix the sweetened condensed milk and the coconut milk together until combined (You could probably get away with using all the liquid in both cans. Also I'm not great with fractions-3/4 of a 14 oz can isn't 8 oz. haha! But it came out just fine :-) Pour the milks over the entire cake. Once the cake has cooled to room temperature, refrigerate for at least 8 hours-overnight is ideal-for the sweet milk mixture to be absorbed into the cake. Be sure to thaw your whipped topping overnight too so it's ready to frost your cake! When ready to serve, spread the whipped topping evenly over top and sprinkle with shredded coconut. ENJOY!

    Hi I wanted to tell u that every Easter I make a family all time favorite Coconut Cake, with coconut Icing recipe by: Emeril lagasse. I've made it since the late 90s. I 💖 coconut anything. I saw your video and thought, I love the poke & soak idea, brilliant. I only had a can of Thai Coconut Cream not milk. I made your recipe and it's THE BEST COCONUT CAKE EVER!!!
    I loved the cake being so moist, but light and the Icing / Frosting was amazing as well, but I used 2 cool whips and a bag of sweeten 🥥. I liked that nothing was heavy or cloyingly sweet. The cake was decimated that night. Now it's my new favorite go to coconut cake. And we are a family of foodies.👏💖👏💖👏💖👏🙌😘🥳🥳🥳👍👍Thank You!!

    Good tip on the topping. Great recipe for beginners. You remind me of my home economics teacher back years ago in high school. Sweet lady.

    Stabilize your whipped cream by adding a little vanilla instant pudding mix before you whip it. I also add a little sugar and vanilla to taste. this will stay whipped and firm until your cake is all gone!

    is there something else i can use with the condensed milk, when there no coconut milk, but i do have coconut flakes.

      miss mayo I haven’t tried this but...maybe half & half because it’s thicker like coconut milk and adds moisture to the cake? That’s my best guess! 😊

    Never heard of this before! A co worker gave me something called a milk cake.. I didn't like it because the taste of the cake being wet/soggy!!
    Is this the same kind of cake?

      This cake is inspired by a Tres Leches Cake (3 Milks Cake), but it's not nearly as "wet" so I think you'd like it! It's moist but not saturated/soggy.

    I make mine by adding a cup of coconut and a cup of coconut milk to cake batter. Then after baked and cooled, I cook on stove 1 C. 1/2 condensed milk, 1 C. Coconut milk in boiler and cook till thickened.Add 1 tsp. Vanilla and spread over cake. Then add 2 1/2 C. Coconut over cake.

    I add a handful of coconut to my cake mix.. and I scrape the top crust off then add another 3-4 can of SCMilk... then I use 1 container of cool whip 1 blk cream cheese... 3/4 can of sweetened cond milk... a handful of coconut and a cup of toasted Walnuts.. mix everything w a 1/2 Tbs of coconut extract... let set overnight 24 hrs is even better...
    I love your coconut milk idea.. I will use it next time..

      Haha oops! I had to go back and watch that. Yup. I used a fork. I do have a tiny whisk, but I must have not wanted to search for it at the time. Same results though!

    No disrespect, but if you’re calling it a tres leches cake, please go with three milks. Otherwise, this is a dos leches cake.
