Third video watching from the beginning. The way you sharpen a blade, I don't think my butcher work knives would last very long doing that. They would be eaten up from repeated sharpening since the synthetic 'Plastic' cutting boards we use at work just dull the edges like crazy. I know it's an old video but if you respond, how long does this edge hold on an average strength steel like in the Mora?
How is the 400 Chosera doing? A few days ago I read a few comments about it, saying that it’s producing too much slurry after some time working on it. Would you say it stays solid and hard through the sharpening?
just got the chosera 300 from amazon via japan for about 70$, i am glad i can still get them for know. the 400 is sold as super ceramic but knowone knows why it is sold under that name but believe me and everyone else that got it that it is a real chosera
hello. what kind of leather are you using? I use nobuck but my polish bevel its not the same. And seems you are using a simple cow leather also by the inner part of the leather? I thought that the correct side for strooping was the external side. Thanks and really good videos!
+Carlos Diaz hey Carlos, thanks a lot! We use simple cow leather indeed. Not too thick and not too thin. The inside (rough side) for stropping. Make sure the leather is not softened with leather wax or something like that. Cheers
Obviously if you hit the strops after either 3 of those they would be super duper sharp, but since your going up to the 3k you wait. People sometimes don't realize you don't have to get rid of the burr on every stone and it will just get smaller and smaller as you go up in grit and then will basically be completely gone after stropping! I didnt know that at first and would spend all this time counting strokes and going down all the way to 1 on each side in single strokes like you showed us how some people do it. I like the way you do it and that's how I do it too now. Yea buddy. Love these videos Martin(I think that's how you spell your name, not sure if its spelled differently in your country ) and I think you should keep doing sharpening videos with different steels and different knives...
+Mohammad Samezal karambits are a pain to sharpen. Almost impossible on water stones. You'll need something to pull the knife trough. Like a ceramic sharpening wheel or a diamond sharpening rod to stroke.
why a karambit, i mean to say is whats good for u dosn't mean it is good for me i cant say anything about a karambit but it is made for killing, even the armed forces will not teach knife use in fighting sequence anymore in the usa.they teach it for SERE training which is Survival. evasion resistance and escape. you last ditch weapon is your side arm, most people live on fantasy on what a knife fight to the death is, two people can slice and chop the hell of each other before one or both fall to their death, i will not carry more than a 2,3" inch edc b/c in nyc tensions can rise and i dont want to get in trouble

i just got my orig chosera 400 from amazon for 58$ free shipping in the states in 3 days , i was awestruck . i thought i got ripped off but i am glad to know it was all legit. the 115 american$'s is same price but i guess it sells via united states and shipping to europe is probably quite expensive
go get a couple naniwa super stones they are not the best for more coarse stones but in finer grits is where the super stones shine better then other stones try an 8,000 and 12,000 to your collection and a strop
Are your choceras in good conditions now? I had my choceras cracked, 2 and 5k. The 400 is the only one I believe will never crack. And I`ve heard of many people that lost their choceras like that.
Yes I still have them in perfect condition! Only the 400 was completely ground down so I had to get a new one. Soaking these stones or drying them in the direct sun can cause cracks. Luckily I've had none in these. My naniwa snow white is all cracks though even though I always took care of it. It still works like a charm but doesn't look nice anymore

So when I bought some knives in America I took the opportunity to get some more compound. one bar will last you some years at least. i've tried many other compounds and they all did the job but the process was much longer or the knives didnt get as shiny and sharp.
man how cool of you dude helping out your fellow man , cause you didn't have to show how you guys sharpen your knife's, I've always enjoyed sharpening my knife's but now I know there are better stones to you thanks to you guys man , good on ya .
i recommend you to keep your ''pressure hand'' in your case the left one always over the stone. if you slip away from the knife you will cut yourself badly in the way you do. if you slip away when your hand is moving over the stone you are safe because the edge under your fingers lays flat on the stone and cant cut you. i hope you understand what im trying to tell you. i have seen some really ugly injuries caused by the tip of the knife.

Nice job! I use the same technique, and achieve the same sharpness. Except I use chosera 400, 800, 2000, 5000 and then bark river white compound. Groeten uit Utrecht!
I hate loaded strops. I feel they're for people who can't get a proper edge on the stones so they go convex the edge on the strop because fuck accuracy.
I don't feel like you should convex on a strop. Make a good convex on your stones and a proper sharp edge. Giving a few strokes on a strop with compound can really give you that little extra sharpness. Also stropping is too slow for a few strokes to adjust the edge angle. Just don't raise the edge higher than you did on sharpening stones
You should check out burrfection channel on TH-cam(obviously) He actually makes strops and they are so much better than ones on the market and cheaper too! Rolled buffalo ones and cordivan ones and latiga or something like that. Even a rolled buffalo one that I bought that is super hard and doesn't give. They look amazing quality and I can't wait. I have made my own and bought some too but I'm hoping this one is the last I get! The guys name is Ryky and if you search on his channel for the videos of him making them or showing them he will have a link. They are on etsy I think.
You were able to shave after the 400? That was unexpected. I was teaching my friend how to sharpen. After doing a knife on a 340 grit DMT stone, I say to him "We're done with this stone, let's see how it cuts. Observe how it feels sharp but that's just because the edge is toothy, watch how there's no way it's going to shave." Well shit, the damn thing shaved.
shouldnt use diamond on the super 3v and other type steel . they leave deep scratches 3v and such are very tough more so than hard. i if looking for doing some flattening i am going to try shapton glass stone
+J gordon Hello Gordon, thank you for your tip. It is important to make sure the stones are dry when you put them away. You should also avoid soaking the stones. I try to take good care of my chosera's but my 3000 stone has some tiny hair thin cracks. luckily it doesn't affect my sharpening so far.
Could you make a video on how you care for your stones? I've been watching your video on sharping knives to learn how to make my knives sharper, to do a better job.
+MasterofPlay7 I love the chosera series. I also have one of the new professional stones. I'm not that happy about the replacement either. I also have 4 shapton ha-no-kuromaku stones. I love them very much. I buy them directly from Japan for a very good price. The stones are very hard and leave a good finish.

if you use black why not go to green before white. i usually don't use black but green/white but as of now would like to try the blk/gr/wh.

+water666 most strops are fine. Just look for one with thin leather that has the rough side up.

Chosera is only for the Japanese market since they changed it last year. The professional series should be equally good and should be sold in the US

I do own the green compound. However, the white compound seems aggressive enough to skip green.

Invest $20 in HEX and you’ll be able to buy as many chosera as your heart desires in 12 months time 🙂
If you'd removed the burr after the sharpening you would have been able to go through the paper much more easily.
You mention this later in the video. the final results are good.
