Creamy VEGAN SOUP With Pickles!

Today, I'm making Broccoli Dill Pickle Soup with White Beans and Potatoes, a recipe I got from Instagram! See link below.
This recipe allowed me to use up a lot of items that I had in my fridge that were near expiration: pickles, dill, chicken stock and I absolutely hate having to throw out food.
Word to the wise: Don't forget to soak your beans overnight! I didn't pre-read the instructions and the beans ended up being a bit turgid which wasn't an ideal soup texture.
Disclaimer: I am not a chef, nor an aspiring one, but I do hope my cooking videos bring joy to you and perhaps remove some of the stuffiness around cooking. I love eating and I love to find interesting recipes that I can emulate for myself and have a good laugh while at it.
