    I had temporary celiac disease when my life was obsessive online gaming, drinking only coffee and eating pizza for every meal.

    I found out at age 60 that I have DH & Celiac disease. I am paranoid when eating out...especially when restaurants don't know what the disease is. I just prepare my own food...it's safer. You cannot "cheat" with this disease.

      100% true This is an old video 8 years ago.Its now 2023 I’m hearing of a lot more people with CD, I’ve become a lot more sensitive. I was 66 when I was first diagnosed I’m now 76. I’ve never thought of taking my own food to a restaurant, it’s either that or eat before going out. Some restaurants are marvellous, It’s the cross contamination many restaurants don’t understand.

      @CookieMonster_ I can’t over do diary. Dairy can be a problem with people with celiac disease, you can become diary intolerant. Which is a double whammy 😉

      @CookieMonster_ I don’t know, maybe 🤷‍♀️ It is known to be hereditary, my Dr said, have your kids tested. My sister has problems, my kids are all good.
      I think one granddaughter may have it. I had symptoms for years, not knowing what it was, then pow 💥 it hits you. And you don’t touch gluten again, unless you get accidentally glutened. 😫 I think if you eliminate, eggs nuts, one thing at a time it may help you, then you’ll know what you can tolerate and the foods you can’t. I love eggs I eat them every day, for me to not have eggs would be disastrous for me. Good luck 😉

      Best to seek out completely gluten free restaurants even though they are few and far between

    I am not allergic to anything altho I do prefer sprouted seeds like sprouted wheat and or fermented products like sourdough bread that went thru a long time of fermentation without the use of commercial yeast. Lots of traditional whole grain products are fermented such as fermented teff flour to make injera flat bread in Ethiopia. I also prefer to soak both beans and grains overnight before boiling them. Sometimes I buy sprouted grains like germinated brown rice. I try to buy organic if I can afford organic grains. I enjoy unrefined vegan foods from the farmers markets. Right now, potato is in season and is a good cheap starch staple (unrefined grains, tubers, winter squash). I have heard rumors that more and more pesticides are now being sprayed on grains so I prefer organic.

    Seventy years ago only 1 of 5000 had a problem with gluten presently it is 1 of 133 ! Monkeyed food supply and semi-dwarf wheat !

      did you not listen to the presentation? the wheat is not semi dwarf. it has had minimal changes in hundreds of years.

      100% right, I believe it’s to do with the wheat they are now growing. You only have to look at the ingredients on canned and packaged food, the list is as long as your arm, 🤷‍♀️ Then,they make the writing so small, you can hardly read it. You can become celiac at any age. I feel awfully sorry, when little kids are diagnosed with CD.

      It has always been here. People lived their whole life with symptoms without knowing why. I read about it in newspaper archives dating back to the early 1900's.

    Obviously English is not Alessio's first language but his English is very good. Unfortunately, he is speaking very fast here though and with his accent is not sometimes easy to understand.
    A lot of good info Alessio but please do it again, updated to 2019 in a studio environment, and please speak slowly.

    I would guess it's life style. And people eat way more bread in the form of pizza. People might think they have celiac disease when they just drink too much coffee and people are drinking way more coffee than they used to.

      I speak from personal experience.. I used to drink tons of coffee and eat tons of pizza and I stopped and the celiac diseased stopped. The coffee seemed to be a component too.@CookieMonster_

      We need to take it very seriously, some times I slip up and it’s not nice. It can cause itching of the skin, hair loss which I had, and my aches and pains become a whole lot worse. If I stick to my diet, I’m fine. 😉
      Read and find out all you can, not all Drs know of the side effects of celiac disease, there’s many.
