How to Make Pork Chops N’ Gravy in the 1820s |Real Historic Recipe| 1829 Delicious Meat

- At first this gravy recipe didn't look promising but I can say that it was delicious! Let's see how Americans made pork chops and gravy over 200 years ago. These recipes come from the New York publication of Modern Domestic Cookery published in 1829.

Brown Gravy, 1829
2 tablespoons of butter
2 tablespoons of flour
2 cups of water
2 cups of ale
Half of a large onion, cut small
Half of a lemon's peel
3 cloves
1 tsp of mace
1 tsp of whole peppercorns
2 tablespoons of pickled mushrooms (you can substitute for fresh if that's all that can be found)
A dash of mushroom catsup
1 anchovy
In a deep skillet melt your butter. Once melted add in your flour and stir well till browned and no longer lumpy. Stir in your water then your ale and give it a mix. Add in your onion, lemon peel, cloves, mace, peppercorns, mushrooms, catsup the anchovy. Give it a good stir and simmer for 25 minutes. Strain through a tight sieve to remove any solids.

I'm in the UK where would I find mushroom catsup ,sounds delicious.ill leave out the ale as my husband is teetotal

As I watched you make the "gravy" the ingredients reminded me of something that makes gravy delicious. I think it is an early version of Worcestershire sauce, the anchovy and clove gave it away. Worcestershire sauce was invented in 1837, by Lea and Perrins, of course, so the time frame seems like a precursor to the gravy in this receipt.

The addition of an anchovy is a game changer. So much so, that when we got a new cat earlier this year, he remained nameless for a month, until one day, it came to me, I named him Anchovy! Hes a wonderful addition to the household 😂
