Its pretty fleible on ash wednesday abstain from meat(can eat fish) and a morning fasting, on Good friday abstain from meat(can eat fish) and a morning fasting this is must, some do this one every wednesday and friday, some do on whole 40 days.

The main difference between the Catholics and Orthodox is that Orthodox do not believe in the immaculate conception of Mary - that means they do not believe that Mary was free of Original sin and she was a virgin throughout her life(means she had other children) but both Catholics and Anglicans contrast from this view - hence in the 11th century both catholic and orthodox split into two different churches. And some sacraments( a few ) are different in these churches but theologically they are almost the same.
