To help clarify the item this is indeed a Spanish dish and its naming convention is from Spain. All the places that use lechón (ie Philippines / Singapore among many others) inherited it from Spain. While the name may be used elsewhere lechón originated from SPAIN.
A lot of us are well aware of the derivative of this dish. Please let this woman do this recipe without YOU making this about what you think you know as it pertains to this recipe's origin 🤦🏾♀️ And no I'm not reading replies

Ok Young Lady. I watched the video, basically, to,compare techniques. I’m Puerto Rican and have been cooking Pernil for years. Everything I’ve seen is on point as far as seasoning, pretty much, like I season it. The only difference is that I do the slits, however, I use the spoon to pour the seasoning Into the slits which helps me to ensure that the seasoning goes deep into the meat as opposed to just using my hands. Just a thought. Otherwise we’re, pretty much, doing the same thing with just that slight difference. Think about it. I’d like to read your comment on the subject.

Pernil is a national dish and traditional pork recipe of Puerto Rico. I grew up with many Latinos and have chef friends and trust central and South American don’t “traditionally” cook it this way! I’m from NYC/NJ family mix AF. The only other country that makes the best pork “lechón” are Philippines and Domis. But that style is 100% Puerto Rican prob consider the best pork recipe.
