My supervisor and I have a question, for the re-heating, the temp has to reach 165 within 2 hrs? Also, after its reheated to the correct temp., how long can it be in hot holdling? Is it 4 more hours? HELP!!!!!!!!!!!!

There's technically no limit on the hot holding, but you are supposed to change utencils, etc. after 4 hours of continuous use.
That's horrible the manager doesn't know he should be removed from that spot or fired
