Always works Scottish Tablet with a twist

    Ingredients
    125g butter, plus extra to grease
    1kg granulated sugar
    ½ tsp salt
    250ml Nut Milk (Hazelnut is my favourite) or whole dairy milk
    400g Tin of condensed milk
    1 tsp vanilla extract (optional)
    Method
    Line your tray with grease proof paper.
    Melt the butter in a large, heavy-based pan over a med-high heat. (Heat 4)
    Add the sugar, salt and milk and stir until the sugar has dissolved. Bring to the boil and simmer over a fairly high heat for 8 minutes. (Heat 4)
    Add the condensed milk, stir well, then turn the heat down (Heat 2-3 interchangeably 2 to start 3 around 13 mins) and let it simmer for about 15 minutes, stirring occasionally.
    Start testing at this point: once it reaches 115C, it's done. (Alternatively, dribble some of the mixture on to a cold saucer. Leave for a couple of minutes, then push it with your finger; if it sets, it's done.)
    Take off the heat, add any liquid flavourings, if using, and beat vigorously with electric beaters until thickened but still pourable (just a few minutes).
    Pour into the prepared tin and leave to set, scoring squares after about 20 minutes. It is best left out to dry slightly overnight.
    * whisk anti-clockwise on medium speed.
    Options
    1 Tbsp ground Ginger (mix in Dry)
    2x Tsp ground Nutmeg (mix in Dry)
    1/2 Tsp Medium Chilli (Mix Dry)
    4 Tsp Orange & reduce Vanilla to 2 Tsp
    1 Tsp Cinnamon (mix in Dry)
    1/2 Tsp Smoked Paprika (mix in Dry)

    Had some of this as a child, made by my Scottish girl friend's mother. It was the nicest thing I've ever tasted but also the sweetest. So sweet that it hurt my throat. I think I'll leave that memory in tact and not make it for myself, having lost my sweet tooth a long time ago. Perhaps I'll wait until I have grandkids to spoil.

      Haha, I totally get where you are coming from. If it helps the 'little with a twist ingredient",ie the paprika, drops off some the sweetness levels to a much more rounded flavour-set. Its still sweet, after it is still tablet, but a lot less so with the paprika.

    You can make amazing condensed milk by simmering coconut milk down, or sweetened by adding sugar!

      Thank you so much. I'll absolutely give that a try, as I am trying very hard to make our diet completely vegan.

    Coconut condensed milk can be used, I believe there is also a vegan condensed milk, but fuck Nestle
