I just realized one thing I really like about you and your videos: Unlike many other (TH-cam-)Chefs, you don't seem to feel the need to apologize for every calorie that goes into your meals or for a shortcut you're using. You just go ahead and say "I'm using full fat cream cheese and store-bought pumpkin puree" without justifying it. You seem just so relaxed and calm and confident and I think that really sets you apart. I always get the impression you want to educate, not brag with you (pretty impressive) skills and that is really nice! I hope you will keep making videos for a long time!

I made these muffins today because I had a package of cream cheese I had to use, and I have to say, these are the BEST muffins I've ever had. They are light, delicious, and the cream cheese is the perfect balance to the pumpkin. I usually dislike muffins, they tend to be dry and boring, but not these! I also like them much more than a cream cheese icing, which tends to be overly sweet. By baking the cream cheese on top, they turn into almost little mini cheesecake toppings, and yet remain light. This recipe is a keeper and I will definitely be making them again, esp. at the holidays. (and they look so elegant and dramatic coming out of the oven!)
Heavenly devine. I wasn't intending to tweak this recipe since she has a reputation for perfect recipes with perfect results...but I do like to swap coconut oil for butter. I didn't have enough sugar or any vanilla extract so I substituted half with dark brown sugar and replaced the vanilla with almond extract. TY for sharing this recipe. Made these to eat cold but took my first bite while they were still warm and OMG 🤤 The cheesecake was so velvety and mousse-like even without sour cream or cornstarch! I was worried the muffins might be dry since they use butter instead of oil and the batter was a bit stiff but they are actually moist and delicious! Thanks for another great recipe! these are AMAZING. I used maple sugar in the cream cheese mix and coconut sugar in the muffin mix and used slightly less sugar than the recipe called for to lighten it up. turned out so so so good

I just made these today - unbelievably good!! I also made the choc chip muffin recipe from the website and it was also amazing! Two very different batters (the pumpkin one is thicker than the choc chip one) but both produced delicious results. Will definitely be making these again ❤️
This muffin is really, really good, great flavour and indeed moist! I had two challenges, 1) making the space for the cream cheese in the centre as the batter sticks to spatula/spoon. 2) I put a bit too much cream cheese mix in the centre eek! but got what we artists call a "happy accident" the cream cheese went on top of the muffin when it was rising and gave an interesting effect that intrigued the people I shared it with. Also distributed the cream cheese flavour. I made them as jumbo muffins so it took a bit longer to bake...had to watch it like a hawk! Very good.

Ok, just finished making these. They are easy to make and very delicious, moist. Also, very versatile. You can add any toppings to mix it up a bit! I followed the recipe exactly and this made 12 muffins. I did have about half of the cream cheese mixture left over, so maybe I will pipe it into the muffin next time.
You are one of the rare cooks that gives both volume (cups, etc.) and weight (metric!!!! Yes!) for ingredients. I almost never use volume, weigh ingredients to 0.1g (scale is accurate to 0.1g) and record amounts for consistency and repeatability. I wish others would do that. An added advantage to your approach is that I learn what weights go for certain ingredients, ex. butter (1/2C = 113g -- didn't know that). It's more difficult for me to do recipes when the only thing they use is volume. I know most people are used to volume measurements but it's less precise. Good work!

I had some neuf chatel cream cheese on hand, so I used that and for my first time baking with a cream cheese filling they turned out so good :) Such a wonderful recipe, and my fiance wants me to add it as a favorite in my baking rotation

Thank you for this wonderful video and not overly smacking your Lips when eating ( a little, but obviously the muffin was still hot so that’s expected! )This video I can actually follow and watch without getting annoyed! Made this yesterday, it came out amazing! the only downside is that the cream cheese didn't stay in the middle, it rose so it was on top of the muffin like frosting, I guess the well wasnt deep enough, still amazing!!

I think calories come with the territory in baking, the great thing about recipes is they can be modified.
