There are different methods of doing it .Some Goan ppl slightly roast the onion and coconut in slight coconut oil, that way also it can be stored for 2 days if it remains....this method raw onion it will not taste good afternoon 5-6 hours.

I am from Kokan and this is an excellent recipe of our region. I suggest an addition, if you give burning charcoal & coconut oil tadka, which adds more flavour to the dish.just try.
