    3:50 You have to gently fold it in, if you whip it with the eggs for too long the weight of it will make the eggs too dense and not able to be fluffy
    Sugar is really light so that's why it doesn't affect it

    Barry puts lemon curd in the meringue.
    Me: Isn't lemon curd full of egg yolks? That isn't going to work.
    Barry discovers it doesn't work. Tries again with a lot less.
    Me: Still isn't going to work.
    Barry shows that it does work.
    Me: Well alright then. Barry is a wizard.

      It honestly didn't really work, though.. That meringue lost a lot more volume than it should have. Alton Brown went into detail about how even a speck of yolk in a whipped egg will make it collapse.. and I don't remember it all now, but it breaks the protein bonds or something like that.. and it just continues to happen inevitably forever until the whole thing collapses..
      More yolk just makes it happen faster, which is why the batch with more curd disappeared instantly, and the second batch just shrunk gradually That meringue is gonna look like a lumpy, charred doily about 2 hours after he filmed. When you're not bound by the rules of a youtube video series, do not attempt this.

      The biggest reason it didn't work is Barry whipped the whites too much. If you over whip egg whites they break down and collapse, that's why it's recommended you gently fold meringue into whatever recipe you are making. Or in this case fold in lemon curd

    Hahaha the end with the cheeky editing to mask the runny curd probably. It's really tough to make meringue without sugar! The rest looks good though!

    I don't know if you can get them in the UK but here in the USA you can get flavored tortillas (tomato basil, garlic and herbs, jalapeno cheddar ect) I make quesadillas with them and they add extra flavor.

    I have the exact same thing with cheese! Glad to know I’m not alone.
    Also I would love to see a 4 ingredient recipe playlist. I feel like with 1 more ingredient it is still super simple but you can just do that little bit more.

    Marshmallow fluff might work well instead of the meringue if you want to stick to three ingredients 😊

    A good idea for the teriyaki sauce is to add a pinch of garlic and ginger!

      If you marinate the chicken in the sauce for about 1 hour before, it's even better. And you can replace the chicken with salmon or mignon.

      He could have, but a lot of teriyaki sauces you buy ready made are too thick to really cook down the way he was aiming for here. But if you could find a thinner one, than that would work.

    On your comment about concentrated juice, it actually is made from 100% of the original juice. Concentrated juice is freeze dried, so that it stays in good condition when flying over the globe. When it is received by the bottler, it then has water added to it to rehydrate the juice. So, yeah, technically, it is still the same juice as it was before it boarded the plane. :)

    not sure if Barry already did this one but my favorite 3 ingredient recipe is this:
    Ingredients:
    -tin of pre-made croissant dough
    -sugar
    -cinnamon
    Method:
    1. Preheat oven to 200 Celsius.
    2. Unroll the croissant dough and cut rectangles, close up the diagonal scoring with some water if there is any.
    3. Mix cinnamon with sugar (to taste)
    4. Spread cinnamon sugar on the rectangle of dough. Avoid the topmost edge
    5. Roll the dough onto itself (like sushi) and seal the open end (you left free of sugar in step 4) with some water. Dunk the outside of the roll in cinnamon sugar as well.
    6. cut 1 cm slices to create tiny cinnamon roles
    7. bake in oven for about 10 minutes. (my oven is quite weak so if you have a strong oven keep an eye on it)
    The result is a tiny cinnamon roll/cookie. Perfect with a cup of tea!

      @@daniellehill565 well, you can do it without the water, the rolls tend to have a little 'tail' then. I didn't really count the water. You could also get cinnamon-sugar instead of cinnamon and sugar.

    The butter and egg yolk in the lemon curd adds oils, which is why your meringue fell. I do like the idea of buying one thing for two purposes, but you might want to try a different product, maybe marmalade, an orange, or some sort of lemon/citrus drink mix would work well.

    I make quesadillas in a George Foreman grill by making half at a time. Just put the filling on one half the tortilla and fold the other half over. Put it on the heated griddle and close the lid for 3 or 4 minutes. You get the grill marks and don't need to turn it.

    Try the Betty Crocker Devil's Food Cake Mix and a can of Diet Coke! And try folding the cake mixture into the liquid, as when you mix it fast, all the bubbles from the liquid get lost.

    The teriyaki chicken is an especially good one because you could add to it a bunch of things that could make it even tastier. You could throw in a little minced garlic or some pineapple juice to name two, and it would just elevate it that much further, especially if you marinated the chicken in advance. Love the series!

    ,If the lemon curd was folded into the meringue rather than whisked in it may have held. Then leave the egg yolk out of the curd, and blow torch it (like others say) to avoid it melting the curd which is probably getting too hot in the over (remember it is made in a baine marie so relatively low temperature)

    There's a suggestion for three ingredient drink, use butter milk, add ginger(grated) and cut up mint. Season and sugar for taste. You would love it. We in India have it in summers. It is very refreshing.

    Tip learned from watching Alton Brown, when separating eggs, use three bowls: do one at a time in a smaller vessel like a cup or ramekin. Move the yoke to a seconds, and move the pure white to the third. Repeat till done.

    the acid in the lemon thing breaks down the proteins in the egg white making it softer. It's why you add a teaspoon of white wine vinegar to scrambled eggs etc to make it softer

    I would love to see a video in this series where you allow yourself to use basic ingredients like water, salt, pepper, and maybe oil. Most people already have it in the house (at least water.) It'd be interesting to see what you could come up with, without having to figure stuff out without water.

    next time Barry, blend all three egg yolks into the curd. Gently fold the stiffly beaten egg whites into the curd yolk mixture. Pour into the pie shell. It will separate into two layers in the oven. The meringue on top and the curd on the bottom.

    When not restricted to 3 ingredients, add about 1cm of chopped ginger and a soup spoon of miring (culinary sake) to that soy sauce. Cut the chicken into cubes, and leave it marinating in the refrigerator for about 1 hour.
    After that, remove the chicken from the marinara, and put in the pan with a thin layer of oil. After that, add the marinara sauce, and let it reduce.
    It's good with some rice and, as you said, sesame seeds.

    Yes juice from concentrate can be from 100% real fruit juice.
    Companies just reduce the water content from freshly pressed juices to make concentrate so theyre able to transport more.
    Say they got 10.000l of fresh juice.
    They cook out the water and make 1.000l concentrate cause its easier to transport.
    And then the add 9.000l of water to get back the 10.000l juice

    Love the look of the drink, will have to give that a go. I love Mexican food but I really hate peppers and I loved the look of the chicken, that with some rice would be great.     From concentrate just means that they have taken most of the water out of the pineapple usually because it’s cheaper to transport and then they add the water back into it

    I've seen where people have put them rings in some cheese cloth or kitchen towel and let it drain it stays stiffer and it doesn't have all that liquid and it wouldn't flatten out

    Am I wrong that I baked the lemon curd in the pie shell then let it cool then add the meringue then just broil the top quickly so it doesn’t shrink?
