So many great tips! 1) when you pipe around the edge, to hold the filling, do you pipe right on the edge of the cake or a little inside? 2) do you keep your cake layers completely frozen until ready to use, or do you let them defrost a bit first? 1. Juuust inside the edge! So like on top of the cake, not hanging off at all. 2. Frozen while decorating! Freshly out of the freezer. Only time I let it come to room temp is before serving :)

I tend to do a very very thin crumb coat. Especially if the exterior frosting will be a different color or flavor than the frosting used in the layers or crumb coat.

Is it safe to put the cake in the freezer in between the crumb coat and the other layer? I heard of some people doing that and I wasn’t sure. Also if it is safe is that a better way to store/help the cake or is there a better alternative?
I personally just do fridge, since the layers are frozen it sets really fast. But freezer would be fine too! Since the cake is fully covered in frosting, it won’t dry out.

@ I did freeze the cake before crumb coating, then gradually, when I apply my butercream, it started condensing (water droplets appeared!!). Is it wrong to always popping it back to the freezer from time to time while frosting? I got it all wrong for this cake! 😩

The problem is in my mind I can do this exactly the same …. Reality is I know this will be a pure flop, but I’m trying to get into the baking business. If anyone has any pointers, advice…etc let me know
I just bake from home for family (they want me to open a shop)...Swiss buttercream icing is loved by all its not too sweet (video on TH-cam on how to make it) chocolate ganache for the one that doesn't like buttercream Flash freezing (put it in the freezer for 5/10 mins sets the butter in the icing so it's firm for the next step) Bake the cake layers in advance and freeze them or bake night before, wrap in clingfilm and put in fridge you won't be stood on your feet for too long (baking and icing in one day i find stressful) which makes me rush decorating coz I just want it to be over lol any icing fondant decorations (fondant that covers the cake should be fresh) do days in advance so you can dry them out, sticking them on the cake while floppy and fresh is a lot harder Remember the 7 P's proper planning and preparation prevents piss poor performance 😂 and have fun, laugh and learn at any mistakes
Me and you know that we flip the cake upside down in order to have the straightest edges for icing but new people to cake decorating don't. i was also cringing at you scooping from the main buttercream bowl for your crumbcoat and placing it back with your spatula. basically contaminating with crumbs even if the cake layers are frozen. all other videos talk about a seperate bowl. last point, maybe it never happened to you but you are skilled at it; beginners might see you use a star tip to pipe the border and do the same and fill with something of a looser consistency and it will seap out. should have included smoothing down the inner border with a simple spoon if someone doesn't have an offset spatula.

Since you decorate frozen layers, does your cake “sweat”? I followed this and had a lot of issues with condensation.

@ I’ve never had condensation so I can’t really say, but you absolutely should be putting it in the fridge or freezer throughout decorating!
What's that chocolate paste you are adding in between? where is the recipe for that?
