How to Make Gorilla Bread - Oversized Stuffed Monkey Bread - Steph’s Stove

  • Gorilla Bread (Oversized & Stuffed Monkey Bread)
    ½ cup granulated sugar
    3 teaspoons cinnamon
    1 stick (½ cup) butter
    1 cup packed brown sugar
    1-8 oz package cream cheese
    2- 10 count cans of refrigerated biscuits
    1 - 1 ½ cups chopped nuts (of your choice)
    Preheat the oven to 350 degrees. Spray a bundt pan with nonstick cooking spray and set aside. In a separate bowl, mix together granulated sugar and cinnamon. Remove biscuits from pan, separate, and press each biscuit flat. Then, roll each biscuit into the cinnamon sugar mixture.
    Remove cream cheese from the package and cut into 20 pieces. Place one piece of cream cheese in the middle of each biscuit and crimp together to close. Place the biscuits into the bottom of the bundt pan. Sprinkle remaining sugar (optional) over top of biscuits and sprinkle with nuts (optional). Set aside.
    In a medium saucepan, melt the butter and brown sugar over medium heat until melted and well combined. Pour the melted butter mixture over the biscuits evenly covering all of the biscuits. Bake uncovered for 30 minutes. Remove from the oven and allow to cool on a wire rack for 5 minutes. After the five minutes have passed, carefully invert the bundt pan onto a serving dish and enjoy!

    Steph - this looks great, but I do have a suggestion (from years of making my monkey bread.). Put the topping in the bottom of the pan FIRST, then add the rolled up biscuits. The biscuits are so dense, the topping doesn’t flow easily to what will be the top after you invert it. If you add the topping first then the biscuits, when you invert it, all that caramel-ly gooeyness oozes over ALL of the bread. Meg from Lilburn, GA

      I laughed out loud when I read your comment! 🤣 One of my favorite memories is about 20 years ago at Christmas my dad, father-in-law, and daughter were eating this while she was opening Christmas gifts. I went into the kitchen for a few minutes and my husband asked where the Gorilla bread was because he didn’t see it. I checked and my dad and father-in-law ate the entire thing. 🫨 I reminded them that they had just ate 18 biscuits, minus the two my daughter ate. They both laughed and said, it was good! My dad is not here anymore and now this a precious memory. ❤️ I say all this to let you know, life is short, life is precious! Enjoy the Gorilla bread and make memories with your family as well.     I always put my nuts in the bottom of the pan first. That way when it’s inverted you’ll have nuts and sauce oozing down over the biscuits. Yum!
