Yes, a combination of hiring a mercenary band and using the 50 archers you start with in your wooden palisade. That should be enough to conquer any other undefended county. After conquering Taupe I disbanded the army to save on their wages. Mercenaries are an expensive but effective way of grabbing more territory early in the game. Of course you can change the number of troops and crowns you start with in the advanced settings, to adjust the difficulty of your game.
I go over the combat in more specifics in Part 5 of this guide. Basically everything is done with the mouse with no keyboard shortcuts. Usually the computer's autocalc will result in you losing more troops than necessary if you play the combat yourself.
