Random Japanese person here 🍣 This is similar to what my family do when we have sushi for dinner. We prepare some fresh sashimi, fish roes, other delish customs, and of course sushi rice. And we make bunch of those rice beds first (as much as you like), then we just dive in and create our own sushi. It’s like a taco party, or a sandwich party if that’s exist, and as you can imagine this is sooo much fun ! Glad you had fun too, Ben. 🍣
I remember the last DIY sushi platter you did was overpriced and overrated. Sometimes the price doesn't necessarily suggest a huge difference, and this ain't bad.
The tamago (omelet) nigiri normally has a thin strip of nori around it and no wasabi pre-added. I usually eat those as-is with no added soy sauce or wasabi.
True. Although I will say in Japan you see a lot of people eating sushi with their hands haha. Sometimes it's chopsticks sometimes it's finger food. Not sure which it's more of though.

You can make sushi with anything. Important thing is the rice which is a type of sticky rice and it is seasoned with some vinegar and sugar.
