Yup! Lycaon - werewolf Corrin - frankenstein's monster Rina - ghosts and haunted dolls Ellen - shark (itself a horror movie monster fairly often, see Jaws) leads many to think if a character gets added to Victoria, it gotta be a vampire-themed character
Ellen doesnt work part-time at the cafe, she is a member of Victoria Housekeeping (the same group as Lycaon, you can see her on a couch on the Rina trailer, and she's the one mentioning she is the only one able to stomach Rina's cooking), who takes all kinds of jobs from being housemaids/butlers (which Ellen always half-asses to preserve her own energy) to combat missions inside hollows (and in regard to combat, she may be the best fighter of the whole group, only held back by her low endurance leading her to often just fall asleep on the spot after a fight... Some suggest she may have hypoglycemia which would explain why she is always with some candy in her mouth, which is also a way to wake her up if she falls asleep out of exhaustion), and, in that case, bodyguard duty.

khors adopted grace, koleda is his actual child, so found-family type deal. To be expected though when yo consider... well... the whole hollow thing, we're gonna find a lot of found family because a lot of people's original families were wrecked.
