INGREDIENTS:;
For the Agrodulce
4 cups honey
½ cup white vinegar
6 garlic cloves
1 cubanelle
1 banana pepper
½ green pepper
½ orange pepper
3 hot red peppers
1 scotch bonnet
For the Chicken
6 boneless, skin-on chicken thighs
Kosher salt and black pepper, to taste
Vegetable oil
For the Ranch
½ cup mayonnaise
¼ cup sour cream
1 teaspoon mustard
½ lemon, zested and juiced
2 tablespoons chopped parsley
2 tablespoons chopped dill
2 tablespoons chopped chives
1 garlic clove, microplaned
Kosher salt and black pepper, to taste
For the Pickled Slaw
¼ cup chopped jalapeños
¼ cup pickled yellow peppers
¼ cup chopped kosher dill pickles
2 tablespoons chopped dill
2 tablespoons chopped parsley
2 tablespoons chopped chives
¼ sweet onion, sliced
Drizzle olive oil
Lemon juice
Kosher salt and black pepper to taste
For Assembly
Hawaiian rolls
COOKING METHOD:
1. To the bowl of a food processor or blender, add peppers, vinegar and garlic. Pulse until a medium coarse consistency is achieved.
2. In a medium pot over medium heat, add honey and chopped pepper mixture. Bring to a boil and cook until reduced by half. Taste and adjust with vinegar and salt as needed.
3. Preheat the oven to 400°F. Add chicken thighs to a casserole dish and season both sides with salt and pepper. Drizzle a bit of oil over the top and bake for 10-15 minutes, or until the skin begins to turn golden brown. Add the agrodulce over the top and bake for another 5 minutes, or until the sauce becomes sticky and reduced.
4. Remove from the oven and allow to rest for 5 minutes.
5. Add chicken to the rolls, topping the chicken with toasted sesame seeds and more pickled peppers, if desired.

thank you for this! made it last night and cooked at 425 until they were to temp. added the agridolce at the end for 5min.
chicken came out juicy! wasn’t as crispy as i like but probably could have gotten it there if i wanted to take the time.
i will say, the recipe makes an absolute f ton of agridolce. 4 cups of honey is way too much. i used 3.5 cups, reduced for a while, and it still was too much. the chicken was swimming and i had leftover sauce lol

this looked so good, so fun. I had to make it. Even made homemade salted honey rolls! And it was so good. My tip - just make sure the chicken isn't sitting in too much liquid so that it can get crispy.
My questions: how much hot honey is really used for the chicken roasting? 4 cups ~and the blended peppers~ means you would have a lot extra.

@@em_birch yeah that was a gooey mess. Fun fact: If you smack the top of an egg with a spoon and crack it slightly before you boil it, the shell comes off so easy.

Made this & just FYI the cooking /temp times are WAAAY OFF!! They were gross uncooked white chicken thighs after the 25 mins at 400 as he suggests. We put them under the broiler for another 15 and they looked right & we yummy!

I make pepper jellies every year from homegrown peppers, and you literally just inspired me to do like a 5-pepper mixed jelly that I can just add to honey + vinegar for this recipe! 🤤🤤🤤🤗 I will make one batch just for myself to try with this, because I love VOLATILE HEAT 😂😂 I seriously can't wait to make this recipe!

Made this last night and is scrumptious! However I think there must be a mistake in the recipe as it calls for 4 cups of honey, which was way too much volume and diluted the pepper mixture. You can see in his video that he doesn’t submerge the chicken in the pan. Next time I will trim the chicken to smaller sizes that fit the buns and reduce the honey by half, minimum.
I was raised eating ONLY honey on chicken. Never knew it wasn’t the thing until I was like 12. It was the 70’s and 80’s. Back when chicken McNuggets ONLY came with honey. Yes that’s a fact. Yes they still carry it. Yes I’m the only person on earth that orders it.

For those making it, the recipe calls for 4 cups of honey. I believe this should be 1/4 or possibly 1/2 cup of honey.
I was thinking this too but I just tried to make it with 1/2 a cup of honey and it turned out incredibly bad lol
i made it with 3.5 cups of honey and tbh seemed like way too much. would like to try again with 2 cups of honey but honey’s expensive.

@@meghanbeck7720 Well where i live, you can find 'em in most of the mega (& some mini ) marts, at least two of those three. However I am biased against fresno's - had one sneak into a plate of veg when I was a kid and never want to see them again!! So I did use two different types that I had in the chill chest; I had the scotch bonnets, we did some jerk pork the week before, but I just threw some jalapenos, and poblanos together with the bonnets!! To quote another of my fav Food-tuber's - "that's just you cooking..." Matty kill'd it here!! This was Fehing GREAT!!
