Why do you cut the old strings? Can't they be unwound from the tuning pin and stored for some kind of project or experiment later?

No, The strings are old and they don’t sound good anymore.

Great job! May I ask what is the white paint you spray on the frame before gold?

It's a filler / putty that fils up little damages on the frame.
