I didn't think Undyne's death would be so heartwrenching. It's even worse than her Genocide death.
Genocide route Undyne is epic, inspiring, and truly the best example of goodwill.
Neutral Undyne (dying) is just sad, but somewhat inspiring.
It's true that it's more sad but her death it's more worse in Genocide

Admittedly there's a bit of horror in all the routes of Undertale, and quite a bit of comedy in all the non-genocide routes. (and even a little bit of comedy in the genocide route, "No chocolate" for example, and depending on your sense of humour, the genocide run is horrifying, hilarious, or both)
I guess I was more describing the overall tone of those routes.

interestingly enough, she suffered the same fate as the amalgamates. overloaded on determination, her body had started to melt rather that immediately turn to dust.
but what is even more amazing, is that it was determination that she herself produced; something that other monsters can't do alone.
If alphys did not give her a sample of determination, (and evidence suggests she indeed did not,) then that would mean one of the strongest monsters in the underground, was also the most human.
I can agree with been the strongest monster. It's a true challenge during Genocide (not counting sans, he cheats and break game rules)
there is actually a theory that his nervous sweat is not sweat but him trying to keep from melting because he also came across determination some how, but thats just a theory...

This brought tears to my eyes. You can physically SEE her attacks getting weaker and weaker. And the slow music doesn't help. She just wants to be a hero. She wants to protect everybody. Merciless Neutral is SO much worse than genocide

On a related note, this is a sneak preview of what Determination does to monsters, something you don't find out the specifics about until the True Lab.

+Gorfinhofin This sort of reminds me of Noble 6's death in Halo Reach, except it's sadder because Noble 6 sacrificed himself to save the Pillar of Autumn, and he had the luxury to know that he succeeded; he saw it lift off. Undyne's death was meaningless, and in the end save no one- by far the saddest "self-sacrifice" death in all of gaming.

Both of Undyne's deaths are so emotional. ╥_╥
In the Genocide one, I welled up at that big, hearty smile she gives whilst melting away.
But this one, it's even worse. It's just so heartbreaking to see her attacks weakening as she passes away, chanting, "I won't die. I... won't... die..." as her voice deepens and she dissolves really slowly. Too much for my heart.
Undyne is probably my favourite Undertale character. I just love how determined and heroic she is, even if it leads to her death.

Undyne, neutral death, is by far the saddest death in the game. In Genocide, she knows she's done the right thing - she is sad she wasn't strong enough, but she knows she did all she could and knew she had to do it... and can take satisfaction in knowing that her death bought Alphys time to save others. In Neutral, she's doing her duty, but deep down, she is not certain if she's doing the right thing. This is why, when struck down in Neutral, she gets weaker and weaker... as her determination fails. Whereas when she's struck down in Genocide, she goes Undying and becomes stronger than ever before. In Neutral, she says very similar things to what she's saying in the Genocide route, about everyone's hopes and dreams, but her conviction is failing rather than surging - in her heart, she's not sure if what she's saying is true. She's not sure if everyone's hopes and dreams depend on beating you. You may have done some bad things (possibly killed Papyrus), but she does not see you as a monster in Neutral. In Genocide, she knew her death needed to happen and it mattered. In Neutral, she fears that - maybe - she's died a pointless, needless death... and she gives into despair because of it in the end. IMHO: this fight is modern day Shakespear-caliber storytelling.

Tomo Key Cookie exactly. That only makes it sadder :( Genocide makes you feel heartless, but Neutral really makes you regret things. Even telling myself “It’s just a bloody game, you can reset. Nobody actually died, they’re just a bunch of pixels drawn by a guy” doesn’t seem effective.

The fact that these attacks are the same first attacks she first sent makes it even more heartbreaking..

There are a few rooms in the game, such as Mettaton's dungeon and the one where Toriel pretends to leave you, where, if you backtrack to the beginning after reaching the end, you can just barely see Flowey quickly retreat into the ground.
He stalks you for the entire game.
This actually got to me. And this is after I've kicked Undyne's ass in genocide twice, but have never killed in a regular run. I understand a lot of things about that fight now.

I unintentionally got neutral, on my first genocide play, when I spared that one greater dog in the beginning; I couldn't resist! I wanted to see how close he would get if I kept ignoring him. Then he ran away, but that counted as a mercy.
Then I got here. What hurt about neutral is you have to see her nobly struggle near death, determined to keep fighting for everyone, and realise; Undyne isn't afraid of death. She's afraid of what it means: she won't be able to protect everyone if she's gone. A tragic, true hero. The music captures all of that message, too.
But did you kill Temmie? If you did, you wasted time killing Temmie but you definintley have to kill the immediatley but Temmie is not a monster, its a Temmie. 3 creatires. Humans, Monsters, and Temmies
Why not just load the game after spared one enemy by mistake?

So I was just screwing around and only wanted to get her health low, but I accidentally killed her. I thought she only persisted on a geno run so I was like "oh well, sorry". And then the music. The dang music. So the whole time Undyne started to waver I never even thought of attacking and kept yelling "DON'T YOU FRISKING DIE ON ME, BISH!" at the screen. I've never felt so bad, OMFG. This has way more feels than Undying, tbh.

Honestly, this death it's sadder than the genocide.
In genocide route, Undyne couldn't bear her determination too, but she accepted it. She accepted her death with hope and a smile, hoping and genuinely thinking that alphys was going to evacuate everyone, that asgore was going to free the monsters, that someone was going to defeat you. Even if she accepted her death, she never gived up. You never defeated her...
But in her neutral death, her last words were "I won't die"... She was desperately trying to not die... She didn't died in peace... She was suffering her last moments... What do u prefer, the person u love dying feeling hope or dying feeling Despair? I'm crying... I love undyne. She's what I want to be in essence... She's so cool... All I want to do is hug her.
Same bro. Undyne is the character I bought the game for and frankly the only one that really stops me from killing Mad Dummy and Mettaton (they just annoy me), because she wouldn’t want to hang out with me and I love her, because she’s just chaotic as heck.
I swear, if I decide to go neutral route and this happens to be, I’m dying to the slow arrows. Screw it.

I'm using no mercy as a substitute for genocide because I've heard that the guy who started that term was kind of an ass during his playthrough
It's not. The first person to call it a "genocide run" named their character "Hitler", and people who didn't know you named your character at the start of the game thought that Toby Fox was blatantly referencing the Holocaust and were upset about it, but the whole thing cleared up when Toby explained that you name your character.

It’s entirely crazy how even to this day Undyne’s death in the Neutral route *still* gives me chills, even more so than her death in the Genocide route. Just the way she keeps clinging onto life while basically melts away really gets to me.

How can people consider killing Goatmom the ultimate sin when _this_ exists? And I say this as someone who wholeheartedly loves both of those characters.
Toriel is due to that she truly does care about Frisk's overall well being, Undyne is doing her best to protect her friends and others from harm and being loyal to King Asgore, even if it means challenging you to a last stand battle.
+Dominic Hekashia (Chaos Fantazy) I think most people don't even know about this death as at this point in the game they're either committed to a pacifist run or a genocide run. I certainly didn't know about it until I realized I didn't know what happened if you kill her on neutral.

+Taloscal Looks like someone else has only done a Pacifist and Genocide run. If you kill Papyrus in a neutral route, he just goes on about himself, saying "But alas, the poor Papyrus...". which totally ruined everything for me. That doesn't mean I don't feel sad for Genocide Papyrus, though.

I've shared this story in some other comments but I wanted to share it here too. On my first playthrough, Undyne was the first major boss I could at least scrounge up a reason to kill. She was extremely hostile and her and Asgore's plan did ultimately boil down to the murder of innocents. Also at that stage of the game she's not very developed so I didn't have much to cling to.
But this death was legitimately the most beautifully tragic moment in the game for me. That beautiful music started. She pulled herself back from the brink of death. That first attack is stronger than any other attack she throws at you. I got mauled by that attack, I was so caught off guard at her clinging to life even after that long fight. She still held on. I suddenly wanted to spare her. This woman who had tried to murder me, she was fighting to free herself and her people, trapped underground for hundreds of not thousands of years. I tried to spare her every single turn after that. But her body wouldn't last. Her attacks got slower. I legitimately had tears flowing down my face as I mashed mercy and didn't even have to try to block her attacks, using every last bit of strength left as she slowly died on her feet, still so prideful, still taunting me.
It all sounds really cheesy in retrospect, but the fact a video game character, a simple sprite and written dialogue, can have this much of an effect on me, someone who normally finds it very, very difficult to be immersed or invested in a game... Undertale really is something else.

It's funny just how powerful this game is. Dunkey, someone who used to be a League of Legends streamer and whose persona is gruff, angry, rude and a huge smartass, did an Undertale video recently. Even he couldn't help but let some emotion into his voice at a few particular points. Granted it was post-added audio so it wasn't him experiencing it live, but, I really think the emotion was genuine. 'specially re: Toriel.

In a way, this is actually more tragic then her Genocide fight.
Because, instead of barely surviving melting and becoming a demon of a Boss, she’s left helpless, during her final stand, resisting the human’s fight for as long as she could, before finally succumbing, crumbling to nothing.
This is absolutely heartbreaking and horrifying to watch. :'( *resists tears in eyes*

+Serhat İşbakan But it plays into true pacifist. There are plenty of scenes that can happen to kick you in the gut if you're in the middle. I read if you killed everyone else but left Doggo alive when you see him in the pub he says he thinks all his friends are playing a prank on him by not moving. Or if you kill all the bosses except Papyrus Sans will tell him that they're all on a very long vacation. And then there are scenes like this one from the Undyne fight.

As you hit Undyne with your final blow, she appears to be dead. But slowly, she rises up.
She is determined to survive, for everyone's hopes. For everyone's dreams. Her determination emanates a strong aura around her. You can feel it. She smiles, even though her form slightly wavers. She strikes at you with all her might
Again. You hack at her. She says you'll have to try harder than that. She's flickering, her determination is slightly fading, and her attacks are beginning to slow.
Her belief is high. You slash at her repeatedly. Her body appears as if it's liquefying, yet immediately turning solid afterwards. She's obviously weak, as she can't muster up enough strength to stab you hard enough to do any real damage.
Even after all of this, you smash your weapon against her with all your might. She drops her spear. She drops to her knees....
She refuses to die. She keeps chanting "I won't die" over and over, slower and weaker in tone as she progresses. She's melting. Suddenly, she's nothing but a pile of dust, some water, and her spear.

Alright! Here we go. I'll be covering the mysterious case of Undyne's Determination with a focus on Determination itself, where it comes from, if it can be created, DT injections, and Alphys testing.
First, a lesson in Undertale Biology:
HUMANS are unique in the way that they are made out of water, and are physically much more dense then monsters. They are fleshy and thick on a molecular level, allowing them to be more durable, and their bodies don't disappear upon death, but simply decompose. Their SOULs are incredibly powerful and can persist for a seemingly infinite amount of time after the body dies.
Now, human SOULs naturally have a liquid-concentration of DT within them, which Alphys believes "gives their SOULs the strength to persist after death." Without DT, a human's SOUL would not last, and end up shattering after the human's body dies like any other monster dies.
MONSTERS are creatures made up of magic instead of water. Because their bodies are made up of magic, monsters can come in all shapes and sizes from animals to demonic entities. They don't bleed, but rather when wounded start to split apart and when fatally wounded crumble into a pile of fine dust. Magical bindings are much more loose than water, so a monster's body can be much more fragile than a human's. Without magic, a monster is just a pile of dust and a SOUL.
Monster SOULs have little to no concentrations of DT, so their SOULs can't survive without a magical casing around them, and they shatter almost instantly upon the death of the body. Of course, BOSS MONSTERS are special species of the Monster kind in the way that have a stronger than normal magical bond onto their bodies which causes them to have little tougher physical makeup than other monsters. More importantly, their SOUL can survive a few seconds after its death, but it is still noteworthy as normal monsters' SOULs instantly disappear upon death. This might actually mean that Boss Monsters are born with a little DT in them.
Now, the important principle:
A monster's body, because it is made up of magic, is attuned to their SOUL, which means that there is a symbiotic harmony between the body (which is really just dust shaped with magic) and their SOUL. Now, this has several side effects. Because of this attunement, monsters:
- Can use magic naturally and easily (while, for humans, its a specialized and acquired skill) for a multitude of things from powering their homes (the CORE) to fighting and the way the magic is used is mostly dependent on the monster itself, for example, Sans and Papyrus are skeletal monsters and use bones as weapons, Toriel and Asgore use fire, Undyne uses spears and so on. Now, this doesn't mean that they can't use weapons to enhance their magic. Swords, shields, tridents, and so on are usually magical in nature, and help put a shape to their combative magic and gives it a focal point in battle.
- Are subject to their and others' emotions, mental states and wills. This is very important to understanding the struggle of life as a monster.
This means that if they are sad, unhappy, lose hope, grow cynical, then they will physically become weaker and their magical bond will became less stable. This can make them much more vulnerable, and they can be killed much easier. This happens because a monster's SOUL is made up of hope, compassion and love which is why if they are heartbroken, love hope, become sad or cold it endangers their molecular bond and compromises their bodies' DEFENSE.
This is actually why Asgore fights so hard daily to keep the Monsters happy and make sure they have hope, because if they don't, the people are in danger. This is also why staying positive is so important in the Underground; why they tell each other jokes, and stay close to friends and family. As creatures of pure love and emotion, a healthy monster is a happy monster.
Another factor is if their attacker is consciously attempting to kill the monster he is fighting, their attacks will hurt the monster even worse, but also, if a monster drops their guard around another creature and they betray their trust, then it causes massive damage. That "backstab" actually ends up being much more lethal than any normal attack.
A good way to think about it is that metaphors, emotions and things with symbolic meanings can hurt monsters.
So:
- If a monster is heartbroken/depressed/hopeless, they get weaker
- If a monster trusts another being, and gets attacked by it, it wounds them much worse than normal
- If a monster is attacked by someone with a powerful SOUL (either Human or Monster) who is attempting to kill the monster, it can easily be fatal.
Now, as for DETERMINATION, and said all of the above to lead up to this:
Alphys studied and extracted the naturally-occuring liquid DT from Human SOULs thanks to the blueprints she had (thanks Gaster) and said that Determination was "the will to keep living, the resolve to change fate."
So, this power is literally an emotional desire. The will to live keeps the SOUL alive in Humans. Now, a monster can have DT too. It doesn't manifest in the SOUL, like humans, but it instead manifests in the body and mind where a particularly strong-willed monster could create their own DT naturally if they refuse their own wounds. You see, most monsters you'd kill would die like this:
- Get hurt
- Lose hope
- Accept death
- Die
While Undyne acts more like this:
- Get hurt
- Become furious
- Deny their own wounds
- Body holds together longer
- Body can't maintain its shape
- Die
Now, since monsters are already beings of emotions, their magical bonding that holds their bodies together get stronger through believing in yourself and having faith in your abilities. The downside of this is that almost all monsters are usually so swayed by their emotions that once they feel as if they are fighting a losing battle, they start to mentally give up and end up dying. Undyne, however, is a monster so strong-willed that they fight through their body telling them they've already lost.
Now, she created in her body DT by being determined to fight and beat Frisk despite being half-dead. The problem with that is of course Undyne is a monster, and her body couldn't handle the chemical she had made for herself. Now, she had traces of DT within her before she lost any HP, but it really started to dissolve her when she had sustained wounds that should kill her. So, a monster overdosing on DT is mainly a threat when they are weak or damaged.
But that was just a death from a Neutral Route Undyne. What about Undyne the Undying?
In the Genocide Route, Undyne gets much more DT from saving the monster kid and standing up to you. You see, all though she should be for all intents and purposes dead after the first strike, she becomes so determined and unwilling to die that her body alters to show it.

DT can heal your wounds, make you strong, but if you're a monster than it can tear you apart if you don't have enough inside you. You see, Undyne had made her own DT from being in the moment and emotionally-impacted (almost like Adrenaline) but whereas in the Neutral Route where she didn't have enough to sustain herself, in the Genocide Route she is filled with so much her body and SOUL changes and she is transformed into "The Undying".
Now, the difference between the Amalgamates OD and Undyne's OD is that the Amalgamates weren't nearly as strong-willed as Undyne, so that the level of DT they were injected with very quickly melted them down, while since she had made her own and had the mental strength to harness it she could use it to keep her alive, but if she was continually attacked she would ultimately not survive.
So, the Amalgamates had an artificial DT injection that brought them back to life, but they lacked the mental strength to maintain themselves, while Undyne did. She was so mentally and emotionally determined that she created DETERMINATION wiithin her. It's kind of like the whole "you didn't gain LOVE, but you gained love," that Sans tells you.
Thus, Undyne's personality from her young years to her current status as Captain of the Royal Guard, her friends, her allegiance to the king, her love for the world and burning passions. These things are what manifested the concept of DT into physical DT. She was like this since she was just a kid, and as a monster, her feelings make up who she is. So, due to the fact that she is this psychologically and emotionally driven, she made for herself DT from her personal determination for survival.
A monster's personality and state of mind can work for or against them in battle in a physical sense, unlike Humans.
As for whether or not she used DT on herself before the fight, I don't think so as this would most likely make her unstable from the get go and she would probably end up melting before the fight ever took off. Besides, to her, this was just another human to eliminate and not much else. After all, Undyne didn't even know about the True Lab in the first place, it's one of the things that Alphys kept from her because she thought she wouldn't like her anymore, so she would never be around the vials of DT in the first place.
Alphys never tested on her because she never told her about the True Lab. They only grew together because, like Frisk, she's drawn to cool characters going through adventures and battling foes. Tough, burly heroes that fight for justice and so on. She's attracted by that sort of romantic concept, and she'd want to keep up her own more intelligent side to try to show worth, but she wouldn't show Undyne the True Lab because she knows that the work she's done is something she feels seriously guilty over. In her mind, she's ruined all those monsters' lives and families, and she would never have that secret exposed to someone she was interested in like Undyne.
And so there you have it.
DT can be created by extracting it from Human SOULs or it can be made from a strong-willed emotional creature. The concept of determination, and the actual chemical DETERMINATION are one and the same.
IamCaptainMan Nice undertale biology but I find a weird thing in the case of mad dummy. If we apply this theory it makes sense being immune to physical attacks as its body is like air due to his mental state. But in genocide run he claims he got that mad at you he managed to combine with his physical body so he becomes glad at you. My question is how would he be more stable ( a ) the more unstable his mentality is (b) if that mentality actually helps him become physical then wouldnt being glad aka not mad at you make his body more unstable?
Soul of Artorias Honestly, that's the weird thing about ghost monsters. It almost seems like they are monsters who have very little or no actual dust at all and are purely magic surrounding the SOUL. How this is possible, I'm going to chalk it up to him being a special type of monster, a ghost monster. His madness goes against the cornerstone of a healthy monster, so he got so furious that he somehow fused with the dummy and his SOUL took affect again and made him happy. It's strange, I'll have to look over ghost monsters again to figure this out.
IamCaptainMan The only logical explanation I could find for ghost monsters is that they are just some mentally unstable monster that happened to be a familly . Nap cries all the time , dummy is always angry and Mettatton...well he is Mettaton. So if they find inner balance in their emotions they become normal monsters. So maybe when dummy felt "such divine hatred" (to quote the Daleks) found its balance in its twisted mind so he attuned to its body. This also explains why on every form except first which is practically a safe Mettatton is low on def he is insecure so mentally weak. Maybe on pacifist run when he goes with a team he would be stronger. But hey ! It's just a theory a game....nope nope I wont say it.
Soul of Artorias I think you're on to something Matpat. Their bodies would be much less stable then usual, maybe even so unstable that they become incorporeal. Fascinating... It makes sense, but ghosts are definitely still a special type of monster.

one interesting fact, Undyne has immense "determination", which people who play the game know has an inworld and meta effect on the game just like wiht flowey and the player character.
Infact its so strong that if you use cheats to get into debug mode, you cant use the cheat to "spare" monsters in fights, both in this version and her neutral fight version, because she's THAT determined to stop you and save everyone in the world from you.
yeah, Alphys made her drink golden flower tea, to give her more determination (I talk about the substance) (golden flower being the determination vessels she uses for her experiences) but because Undyne used so much determination, her body couldn't handle it

Undines dialogue here is sad beyond belief. You are not facing someone who is an estranged king, a showbiz robot, or like anyone else in the underground. You face someone who's got a purpose. Or rather, has a new one. At first, she was a hero, who was determined to defeat you and free her people. But now, she is determined to kill you, because you have taken someone precious. Papyrus was a skeleton who was determined for many things. Determined to capture you. Determined to join the Royal Gaurd. And finally, determined to be your friend. And then... Nothing. He was gone, and floated away in a breeze. Now, you face someone who really cares about him. Sans was strong, but it took something truly evil to get him to come out. Here, you battle someone who knew how much he wanted to do those things. He would answer calls immediately, he was so excited.
Wise men fear the anger of a gentle man. However, the protagonist, and by extension you, are not wise, and Undine is far from gentle.
Sans does still get really annoyed and upset with you about killing Papyrus in all endings except the Annoying Dog ending, where he doesn’t seem to have a care in the world, and even thanks you.

Definitely more emotional than the Genocide run. And this being the way I first played it (I'm used to old-school SNES games where you had to kill everything, don't judge me) made it even worse. Undyne you'll always be my favorite...
You know, Undyne is a truly determined fighter but...
In the genocide run at least she fought her very best, to the very end to the point the psychotic protagonist at that point actually acknowledges her as a challenge and a worthy person to attack; and even when she lost she didn't beg for mercy or cry, but smiled. Undyne died as a proud monster warrior who believed in her people. She died a fighter who held onto hope.
Here..? She just doesn't quit until her attacks are so slow a slug could block the attack and then starts screaming her regrets and clinging to life as she horrifyingly melts away as her words slow and dies mid-scream....It's pitiful and painful to watch her drag out her death despite knowing it's here; like watching something be shot and then try and cling to life by crawling away or feebly fighting back to no effect.
That is why this is one of the worst deaths this game has to offer (along with the cruel mercy and then backstab or Toriel and Flowey at the end of Genocide). It makes you watch your victim writhe in despair before they die by YOUR hand

what makes this death so much sadder and more horrifying is that unlike the others, she doesn't die immediately. she dies slowly. and you get to sit there and watch her deteriorate until the bitter end. her attacks get slower, her body wavers and loses shape, her voice distorts and slows down...it's just awful.
Some can call this karma. She was a bloodthirsty hypocritical piece of shit, and got what she deserved.

It plays as either a hopeful plea of support or a tragic parody of the result, depending on the phonecall. It comes back in Pacifist twice in the same context, as a heroic march and peaceful Respite. The most underrated song in the game

In my opinion, this is the saddest moment in the game. I first saw it when I tried doing a genocide run. I thought that maybe, just maaaaybe, I could escape her wrath by sparing Monster Kid and killing her afterwards. After all, the end result would have been the same. But alas, no, and after that scene, I couldn't handle genocide. Never doing it. No way.

+Meryetdead Yeah, playing a neutral killer is way different than genocide. If you attack monster kid Undyne takes the hit, starts to dissolve, than says NOPE! And becomes determined enough to morph into a new form that is exceptionally difficult with some kick ass music to boot. The neutral version of this fight was much worse to see.
What's strange is that in in most other games, the music would normally get more energetic and dynamic, right? But here, it turns into an almost tranquil sound with a quiet intensity. You know it's over, but you're still trying to keep going anyway...
Maybe Undyne knew that what she was doing wouldn't be enough. Maybe she knew that she would eventually, and quite literally, fall apart. But...she just kept denying it. She kept telling everyone she was protecting - and maybe even herself - that she would defeat the enemy and rise victorious. She was "smiling as if nothing were wrong", even as her attacks grew weaker and her body continued to fade away. Deep down she probably knew she would fail, but she didn't want to give up. She didn't want to let anyone down.
Then the music stops. You both know it really is over.
That's truly what is so heartbreaking to me.
An Ending is one of the best and most underrated songs in the game. I cried.

My favorite aspects of Undertale are the ways the game mechanics complement the characters. Particularly the attack patterns. Like here, Undyne goes all out trying to fight you, but as her form grows weaker, her attacks get slower. That, along with the slow and sad music, really sells the tragedy of this fight.

My absolute favorite part about this scene is that Undyne nearly goes full genocide difficulty on you. Her eye changes, her voice becomes different, she even uses a lot of the same lines.

The reasons the monsters with determination melt is simple I think.
Monsters are just projections of their soul and don't have a physical container for it.
When a soul becomes infused with determination it starts to change it's form into a more fluid state - with determination you bend your will to do what you set out to do and you try to become something that can handle the situation.
Humans are capable of holding the determination because they have a physical container that keeps the form of their soul intact - it helps them remember who they are and it cannot change trough emotions.
tldr: Monster could have determination if they also get a physical container to shape them.

Well that is kind of the case with undyne. She got so much determination in the genocide run that she transformed into undyne the undying, but I think she got so much determination because she knew everyone was counting on her, but when she dies she could not keep her body together. In the nuetral run however undyne is not protecting everyone, so she does not get the extra determination to turn into the undying. She still has some because she still delays death, melts when she dyes and even turns into the undying right before she melts buts it's not enough determination. Sorry if this was a long comment
There's a theory that Alphys gave her small doses of determination. Undyne does mention Alphys giving her some strange pink stuff on one occasion iirc.
