You're not smoking chicken, you're BAKING it when you do at that high a heat. And in that little BBQ your heat source is to close for true "Indirect Heat" imo. AKA Two zone cooking. But in anyone's opinion you smoke ANYTHING at about 225/275 tops. Chicken included. Gabriel Berki we will see if we can make that recipe work. Gyro means “to turn” so it’s a bit of a challenge to get a true Gyro.
