Eric Soelberg was a high school athlete-turned-young husband and father and, like many on the family, marriage, and career track, he lost sight of himself and his own health.
Food became an escape and a way to numb, and in this episode, Soelberg vulnerably shares some of those moments when he realized he had fallen into unhealthy eating behaviors and addiction. Not only was he hiding food, but he was visiting fast food drive-thrus multiple times in a day - feeling the shame, but also satisfying the cravings.
Yes, he watched Forks over Knives and read the China Study - and it all made sense - but as we know all too well, having the information and making lasting change are two different things. It wasn’t until 2021 when he started feeling neuropathy and tingling in his toes and fingers that something clicked. He was 260lbs.
Driven by a newfound commitment to health, Eric sought guidance and he shares his recipes for regaining his health and life. Whole plant-based food is the grounding element, but it’s about so much more for him now, including education, community, and daily self-reflection.
Eric may be your (self-proclaimed) “average guy,” but you’ll find him anything but…

This guy is me!! Everything he is describing when he was covering his bad habits was exactly me 7 years ago. Hiding junk food, being excited to leave the house so I could grab a doughnut, extra servings at fast food places. This makes me feel good that I'm not the only one. I'm so glad I found wfpb 6 years ago!!

AMEN! ABOUT A YEAR AND A HALF AGO I LOST MY HUSBAND TO HEART FAILURE. I MADE UP MY MIND AFTER GETTING A DIAGNOSIS OF CANCER TO EAT WHOLE FOOD PLANT-BASED. IN 6 MONTHS I LOST OVER 70 LBS. I HAD MY SURGERY THEY DID NOT SEE ANY MORE CANCER. SINCE THEN, I'VE BEEN RELAXED AND I WENT BACK TO EATING THE SAD DIET. I'VE GAINED ALL MY WEIGHT BACK. I'M 56 AND IN TERRIBLE HEALTH AGAIN. WHEN I ATE WFPB, I FELT WONDERFUL. SO GLAD TO KNOW THAT I'M NOT THE ONLY ONE THAT KNOWS HOW TO EAT AND JUST YO-YOS A LOT. SO GRATEFUL RIP THAT YOU DID THIS INTERVIEW. IT GIVES ME HOPE TO GET BACK TO EATING HEALTHY. THESE TIPS THAT ERIC HAS SHARED WILL BE VERY USEFUL. THANK YOU RIP!

We all have our own story on how we eventually came to eating WFePB (whole-foods, entirely plant-based). But one thing seems to be a constant among us all, which is that none of us had a clue about nutrition.
We go through all this schooling, starting from a very young age and going up through high school, college for many of us, and even post-graduate for some others. Yet during all that time, none of us ever had a class on nutrition. We learn how to spell, we learn how to add and subtract, we learn about history, we learn about geography, etc. But not one class on how to keep this body of ours in optimal shape through healthy eating.
We come to find out, however, that even medical doctors aren't even required to take a course on nutrition, or if they do, it's maybe one several-weeks class and that's it.
Many of us are fortunate enough to have a parent or parents who sit us down and tell us about the birds and the bees. Yet none of our parents have "the talk" with us us about how to eat right. What proteins are. What fiber is. What fat is. Nothing.
No teaching about nutrition and what to eat and what not to eat. All that schooling is worthless if we suffer a stroke and lose the ability to function. Or we are in need of a heart transplant. We need to keep this body of ours as strong as possible, yet no one teaches us about proper nutrition.
(By the way, I've been WFePB now for over five years, and I still find myself baffled at how incredible I feel. It has truly been life-transforming!) 💪
