    I really enjoyed this video. I just started fermenting last year when Covid hit. I live in Mexico on the Coast! It´s impossible to keep my ferments happy. I am looking at a fermentation Box or Tent to control the environment. Thank you for sharing, so many TH-camrs don´t consider high heat/humidity climates.       Yes! It's as if everyone lived in temperate weather. I had to think really hard how to grow koji in this super hot weather. All the best!

    Do you have a link to the peltier cooler you used? I'm building a tempeh fermentation chamber and the summers where I live are too hot for the mold to survive.

    Hi, im living in Bangkok and also looking for a diy Koji Chamber. Whats the temperature likes over there that too high for the koji? Can you just use fan as a ventilation to decrease the temp and increase the airflow instead of refrigeration unit? I thought 30degree C is typical for indoor climate?

      Yes, you can grow at Tropics room temp. But it will typically be kept in a box to prevent contamination and Koji is exothermic, it creates heat and can send the box temperature to too high. Before I had this refrigeration unit, I open the box every 6 hours to let cool air enter to regulate the temperature. Good luck!

    Will the air circulate inside the box ?

      Not much. There is a small fan at the refrigeration unit. Can always add a small USB fan if needed.
