    I know nothing about Sake....or more accurately, I KNEW nothing about Sake, this series is going to teach me everything I ever wanted to learn

    Amazing & quite a physical experience, while the Koji mould spore spreading reminded me strangely some religious experience I've lived when I was younger (Orthodox priests spreading incense in Church during masses at several moments, to symbolize the presence of God in it, but it is to also to make prayers addressed to him, prayers which will be elevated to him, so interestingly it is an ascending movement, while there, it is only a descending one. Interesting also that the "Koji master" here doesn't go too low in his gesture, as you said everyone as his methods, while you are staying quite low in yours (which I'll probably do the same, thinking the master's gesture could spread too much of it outside the table.../Sure I know incense is also used in Asia for some rites). So, quite an Intense work it seems, and it is only day one ! Curious to see the next episods ! Thanks for sharing with us this amazing experience ! (forgot almost to say that the location was gorgeous)👍

      We're making differing amounts for Koji for each stage of the process. Of the rice that is steamed, about 20% is used for koji. As for bottles produced... keep watching to find out! Kanpai!
