Ragi (Finger Millet) Whole Grain Sourdough Bread. An Easy, No-knead 'Gel Method'.

  • Ragi grain, otherwise known as 'finger millet' is a highly nutritious grain and is excellent in whole grain sourdough breads (as are other types of millet and non-gluten grains). This ragi bread recipe is very easy to make, is naturally fermented with sourdough starter, and uses a combination of fresh milled whole wheat flour and whole ragi flour in the recipe.
    The special ingredient used to help bind this dough and give it a great structure and rise is psyllium husk. A small amount of psyllium is gelled with the water and sourdough starter to form the liquid portion of the recipe.

    I’m currently 4 days in to the process of making my first sourdough starter.. I want to try this recipe once my starter is ready. The bread looks great and it’s always a great idea to reduce the amount of gluten and increase complex carbs for overall health

    Ragi seed has such a beautiful color! Totally to new to me. I'm excited to try this recipe. Reminds me of your beginning bread videos, as I had to look up phylum husk. I'll be happy if my loaf is half as lovely as yours. Elly's Way!

      Thanks Kathy, it's a really fun and interesting grain to use. And very nutritious! Very high in calcium I'm told. The psyllium husk is a great trick, makes these loaves SO easy to get great results.

    Beautiful loaf Elly, Must check out the ragi in my local Asian store, update on your recipes, your sour dough starter is fantastic, I followed to a T and to date made your oat loaf plus a wholemeal, then an oat wholeml, rye and chopped olives and dried toms. amazing.     That looks like a great loaf Elly. That's new for me - the gel method. Will give it a go. After you reviewed the equipment you use to bake, it was ages ago now, I haunted the Salvos, Vinnies, etc stores in my area for a few weeks but ended up getting a Baccarat roaster on sale at House, sorry, I don't remember how much I paid, but not too much for Aussies who may want to check it out. It's a great system with very good results every time and loaf pans fit in very well, so always consistent results. Ok, next. Elly you have a husband who bakes? You are swimming in riches beyond compare. If Jim can load a dishwasher you are truly a blessed woman 👏🏻 😅

      Yep. He bakes. Likes to wing it but is naturally successful. Working on the dishwasher skills :) I love my Baccarat roaster! Honestly bakes the best bread. I like how easy and light they are to handle as well.

      @@ellyswholegrainsourdough Yes, that roaster is much easier to manage than a Dutch oven, for example. It's made baking a breeze to have a moist middle and crispy crust. Well, at least Jim is still working on his dishwasher skills - a couple of decades ago mine just gave up, even though I had reduced the principle down to placement in relation to the direction the water was going to hit the plates, glasses etc. It seems to be such a difficult concept. I don't know why. One of life's mysteries. Sydney ABC radio has a regular rant session. The number of marriages dealing with this problem seems to be epic 😂

    That looks great! I am always looking to incorporate ragi in my diet so this is a great recipe. I also wanted to share the fact that if you soak about 100 gms linseed in very hot water for an hour or so it forms a great gel. My linseed incorporated breads have a great rise and a very open crumb.

    Do you have any problems milling seed like that in your Mockmill? I was wondering if the oils in them could create a problem. I've only milled my wheat berries in mine.

      Not at all Diane, but great question. Ragi is actually more of a grain (much like regular yellow millet) than a seed, but in India it's referred to as a seed (all grains are seeds, technically). So it is not oily at all! I should probably take the 'seed' word out as it's a bit misleading. It's really more like 'ragi grain' than 'ragi seed'. Definitely no issues with milling this in a Mockmill.

    The bread looks divine, delicious! Perhaps I should refer to your gluten free bread recipe to achieve such success using gluten free flour and starter with the millet?
    ...After years of using my power blender to make fresh course ground grains and seeds, while wanting to make my own fresh flour, finding your videos has me decidedly set on purchasing my own Mockmill 200 🙂

    well, I just bought a 1.1 pound package (1/2 kg) for $13 USD on Amazon- it would cost more in gas to drive over an hour to an Indian store. that'll be some expensive bread, but can't wait to try this!

      Ooh, that's exciting Jessica! I hope you like it. I love it. My roaster is an Australian brand called Baccarat. I used to have a link for them but they are not available online anymore. This one is similar, but wider than mine www.baccarat.com.au/baccarat-granite-roast-grill-34cm They are cast aluminium, so very light and great for even baking.

    Nice. Good to have when there is not much time avaliable. If you stretch and folds it, though, will it be the same or more open?

      Thanks Amund. It's actually quite hard to stretch and fold this dough - it has a weird texture and the gluten doesn't form in the usual way. I don't think there's any benefit in doing it but you could try and see how it goes.

    Hi Elly. I wonder if that would have been easier to mix in your new bear mixer? Could you have used only the ragi flour? I’m a diabetic so wheat is not the best for me. Also is it possible to have a gluten free starter? Mark.

      Hi Mark, yes, this would have been great to do in the Bear mixer! I made this video long before purchasing it though. I've been trialling a gluten free sourdough formula behind the scenes, and will share a gluten free starter video soon too. You can definitely make excellent whole grain sourdough gluten free!

      Hi Mark. Ragi makes a great low carb porrage for diabetics. There are ragi recipes for flat breads and loafs, for diabetics. Be healthier. Peace
