For those wondering about the difference between tempered chocolate and chocolate that does not need to be tempered (compound chocolate), the difference is that chocolate that needs to be tempered would use cocoa butter as a fat while compound chocolate would use other types of oils like vegetable or corn oil. With tempered chocolate, the end result will have a very glossy surface and will taste more like 'real chocolate' if you will. With compound chocolate, the same crunchy texture is there but the surface will be dull and the chocolate flavor will not be as prominent. All else aside, I would recommend compound chocolate if you did not mind the taste since it is not much different and it is easier to melt.
These are sooo cute!! Adorable! I would sit the mould into a round cookie cutter while pouring in the chocolate, so it doesn't wobble around and you don't have to hold it in place. This idea is sooo great, thanks Gretchen!

For my 2 nieces Hannah 4 her sister Elizabeth 2 they want pink and purple hop to try doing these Thursday. Have you ever put your chocolate molds in the fridge or freezer to set. When the cups are all done can I freeze them before I fill them. I want to surprise my nieces this Friday the 24th I was going to put them in my little white box with a ribbon on the box. Thanks. I just eyed the size, you can d a trial and error, the chocolate can always be remelted. No need to refrigerate the chocolate if you are using candy melts or tempered chocolate it will set in minutes.
Gretchen's Bakery I was hoping to using the candy melts I get them from a place here where I go Milwaukee it's called cooks cakes decorating & candy supplies they have everything you need for bakery shops and caterers I got there milk chocolate melts. I have used them Before they tastes good. my niece wants pinks and purple. Just wondering how does the Wilton color melts tastes.

I used flower cupcake moulds and the chocolate bowls turned out like flowers. Oh yes ! You guys can also use red colour chocolate melts to make the flowers beautiful. Have fun guys!😋😋

beachbum0014 It all depends on the type of chocolate you purchase. . . not all chocolate is the same. . there are chips, baking bars, candy bars, coating wafers etc. . . each may be differently. . . so unless you can tell us exactly what you are going to buy your question can not be answered.

beachbum0014 That chocolate is going to have to be tempered. I don't know for sure if it come already tempered, but when you melt it many times, it is very easy to heat it too hot and get it out of temper. . . You can always do a temper test to see if you need to temper it once it is melted.
Gretch (may I call you that?) where do you get your gloves? I have supremely hot hands, and I need a way to avoid them to melt things, also would like to have another layer of hygienic layer/protection (if you will) when making cakes and things with chocolate.

Anything hot will melt the chocolate yes, chocolate starts to melt around 86°F - I use these cups for mousses, puddings, fruit salads etc

Does your chocolate ever really harden? The compound chocolate we have here sets, but doesn't harden. They're very soft and fragile.
