Fantastic stuff. A real comfort food video. I remember really enjoying your TV programmes in the early 2000s. I'm not a very good cook, but I enjoy watching other people who can cook. By the way, the white bit of the kidney that you removed is called the renal pelvis (but that probably isn't a very good culinary term)

I once ordered rognons in Paris and the kidneys were served with the connective tube still in tact. Hard core.

I had devilled kidneys in a restaurant one time. It looked nothing like that. The kidneys were whole, not much sauce and I think they had been cooked in vodka.
This is the stuff…
