Oh, Viva, I cut crosswise like a lattice so that the oil dressing falls inside the cut.. I didn't know how much oil, garlic, and lemon.. Today I use 2 tsp. olive oil, 1 tsp. freshly squeezed lemon juice, 2-3 cloves minced, salt and pepper. It was awesome.
I have some Japanese eggplant and didn't know what to do with it. I didn't know if they needed to be soaked like the fat eggplant, or if I can just cook as is. This recipe looks yummy, easy to make, and inexpensive. Thank you for sharing! :)
VivaLasVeggies I have six Japanese Eggplants that I am growing this year. Haven't had one issue from them thus far. They seem very easy to grow(my first time growing them). They are getting bigger by the day and I love the purple colors on the leaves...Very different. I have over 200 plants this season.
