    Hi Rocky,
Just writing this to let you know some more about the dishes. 😊
-Ngaa thongba (fish dish) as you saw were of two types. The ngaa ataoba thongba is basically when the fish is fried and then added into a curry with the pieces being more intact; while the ngaa atoiba is when the fish is kind of assimilated into the gravy (with pieces being smaller) along with potatoes and peas.
    - Iromba can be of any type. You think of a vegetable and mostly it can be made into iromba. However, the sour taste you felt was because of the fermented bamboo shoot. The most popular kind of iromba is the yongchaak (stink beans) iromba.
    - Maroi thongba is basically a dish consisting primarily of garlic chives. Garlic chives are very crucial to our manipuri cuisine. It is basically substituted for onion and garlic during tarka. We have the thinner leaves maroi nakuppi (the one which is used here) and maroi napaakpi (the one which flatter leaves). So, apart from maroi, the dish usually contains peanuts, thaangjing (fresh foxnuts), potatoes and bori (pokora like made of lentils and spices).
    - Ooti thongba can be of many kinds. The one here is made of green peas. It is basically a kind of dal but what makes it different from other dals is that we put cooking soda in it. This really changes the flavors and the texture.
    - Pakora thongba is basically pakoda in an uber tasty gravy. While the gravy looks simple from its look, it is one of the most flavourful gravy ever. Sometime, we even put sougri in them. I think it is called Ambari in hindi.
    - Hawai thongba is basically daal. It can be of various types but in Manipur our tarka is basically of garlic chives. And the flavors is amazing!
    - Chakwai kheer is one the most special sweet dishes in Manipur. It is made of a special kind of black rice indigenous to Manipur.
    - Hei thongba is basically sour fruits cooked with sugar. This is usually kept for the end of the meal to cleanse the palate.
    - Madhurjan thonba is basically a sweet dish of pakoda cooked in milk.
    - Kangsoi thongba is basically like a soup with dried fish, ngaari and vegetable. Pick a vegetable and you can turn it into Kaangsoi.
    - Kaanghou is basically fried vegetables, beans, etc along with spices.
If you have noticed, fresh water bodies have a lot of influence on manipuri cuisines. That is why there are a alot of exotic vegetables that are grown in or around water bodies which are used in our cuisines. Example being lotus stem, fresh foxnut, koukha (Arrowhead), ekai thabi (water mimos), etc.
Trust this helped you understand our cuisines better.

Irom doesn't have lemon nor tomatoes....At times we use galangal also...
Some dishes along with small bori with green leaves are Chinese Chimes...here we have two-three variety of maroi(chimes). Which is very good in lowering high blood pressure. Normally the dishes starts with steam vegs or boil vegs...which will a lining to our stomach walls..
At times we have singju fresh vegs chopped finely...mostly all leaves, banana flowe, lotus inside water stem...
We have different varieties of leaves available in the hills and valleys...
Was hoping to see you in Imphal...n now seeing you live enjoying the food gives immense pleasure.
The Chak-hao kheer which you had also has some varieties...
    Kindly try the local fruits...also...

Rocky.. a misinformation you have spelt out and the guy in orange shirt didn’t bother to point out..
Iromba is basically a spicy mashed boiled vegetables chutney. There are many types of iromba, it may be with fish/ngari or a completely vegetarian ones..
The one that has been served to you is a fermented bamboo shoot “SOIBUM” iromba. The tanginess is from the fermented soibum and not any lemon or any citrus squeezed into it. 😂😂
But yes the base for any iromba is boiled vegetable - it can be anything from potato to taro root, arbi, water foxnut, squash, bamboo shoot, tender banana stem, etc..
It should have 4 main textures/taste
    - Starchy
    - Spicy 🌶️
    - ngari for the umami
    - fresh herbs toppings for the crunch and freshness
Wonder how you guys got in touch with this guy who is not versed with the intricacies. If he is Govt Of Manipur Tourism Dept designated tourist guide, then they can do better with someone who is passionate and knowledgeable about the intricacies and is well versed to portray what needs to be shown to the outside world

Hey there is no nimbu in eromba 🤣👍.... Thanks for promoting us but don't spread erroneous to people who watching this channel... And in terms of fish curry it is used by " U morok " Or meitei morok... Morok means chilli not Naga chilli. Naga take advantage and take patent first and took credit . Not Naga chilli it is u morok of manipur ( kangleipak)

A very good attempt and thanks for showcasing our unique dishes to the world. But what is irritating is people from outside the state going back with half backed knowledge about the culture. I really wish somebody accompanied you to describe each dishes properly and how they are cooked. Some of the ingredients are unique of this area and one will not come accross in any sabjee bhandar.
