Similar issue on my 2003 X type with the 2.5. Only has 54,500 miles. Going through about a gallon of coolant almost every 2 weeks. I have traced drips right under the radiator under the Jag. Have not checked thermostat housing or thermostat.
I've seen it done both ways. Probably doesn't hurt if done properly. Looking at the procedure direct from the Jaguar Workshop Manual, all it says is "install a new gasket".

Burning coolant has a sweet smell. I've had that issue since the car was young. I could never find a definitive source however. When I find a leak, I replace the parts. At a minimum replace whatever you think is causing the issue if it doesn't cost too much. My x-type is now over 17 years old, so really every hose and seal should be considered for replacement.
The serpentine belt was a major royal pain when I did it. The new belt kept on springing out of place, and I could barely get the tensioner compressed enough to give me the extra space for the belt to slide over it. Somehow I did it though.
Hello, I have a bad leak on my 2006 type s he replaced the water pump and I wanted to drive it, let it warm up first and pulled it out of the shop at idle speed and it beeped the whole time. I parked out front he came out and said it was also running hot. My fans stayed on for a few min after turning the car off. We're thinking it could be a hose now ?? Plzzzz help $$$$
When the belt is removed, the tensioner pulley should be free spinning to allow the engine cog to spin the water pump under tension. If the pulley doesn't spin freely or is locked, it could eventually damage the belt.

Some say that you should use a bit of some kind of RTV on the paper sealing gasket.

Hey that burn might be your water pump starting to seize up. Upon pre seizing the belt will still run however start burning.

i have a noise coming from that side of the motor ....not sure if its the water pump or that bearing next to it that has that bigger pulley
Maybe try disconnecting the belt from the water pump to see if the noise stops. Of course don't run it too long this way to prevent over heating.
What engine 2.5 or 3.0?
Thanks for asking. It's a 3.0. But I don't think there is any differences in parts or procedures for the 2.5 water pump replacement.

Some folks do, some folks don't. If you do, just be sure to use a very thin layer. If you don't be sure the surfaces are totally cleaned off.
I think you should have used a thin layer of silicone on both sides of the gasket
Yeah the extra insurance could save another gasket leak. But at least the procedure is very simple to do.

I also had to replace my reservoir expansion tank and lower expansion tank hose C2S23485 in the last few years , but both were visibly leaking.
