Hi. That's pretty normal. Just tighten your stitches when you do the 3sc and also make sure the chain is not too loose... and besides they would close up and tighten as you go along with the potholder.

I'm confused she says " after four rows" in the beginning with the blue yarn but it looks like there are more than 4 rows with that blue yarn in the beginning? Am I missing something?
After you do the chain foundation, crochet 4 rows around it. You are crocheting in a continuous method around the foundation. This is not a back and forth or turn your work method. Once you are done with the 4 rows and lay it flat, it will look like 9 rows. Hope that helps.
