Sicilian Eggplant Caponata

Delicious eggplant caponata from the beautiful island of Sicily. Sweet and sour with so many flavors and textures coming together in harmony. Easy to make, even though it does involve a bit more prep than my other dishes. I like to serve it as an antipasto with some slices of crusty bread.
