  • Delicious eggplant caponata from the beautiful island of Sicily. Sweet and sour with so many flavors and textures coming together in harmony. Easy to make, even though it does involve a bit more prep than my other dishes. I like to serve it as an antipasto with some slices of crusty bread. This time I'm going to make some sandwiches for a sunset cruise. Try it. Let me know what you think in the comments.
