The other one you described reminds me of a "Maria" cookies cake we also have here which is usually frozen before served, although instead of chocolate sauce we layer a rich whipped cream between the cookies, or a fluffy cream made of whipped butter and sugar, some people even make a coffee flavour cream.

Well, I made it today but it took ages for the hot milk and cocoa to reduce. In fact, it never went down to half. After letting it cool, I mixed it with the cookies but it is still runny, even in the refrigerator. I am going to put it in the freezer for a while to see if it solidifies.
I’m wondering if I need to use whole milk for the fat content to get it to reduce and solidify? Most people where I live in uk use half or zero fat milk which is no good for sauces I find 🤔
