You mean the spot where you placed the Player Sprite? If so, use the Object Tool and then right click anywhere on your (smaller) map and select [Define as the Hero].
Is there a way I can make the player sprite double the size of the grid? it kinda forces you to make a chibi artstyle character and that doesn't go with the game vibe I want to make
You are not limited to character sprites being 32x32 pixels. You can make them as large as you like (though try not to make them TOO large, else you will put a strain on the engine). Just be aware of 2 things: Paper Maker works best with 1:1 sized sprites, and increasing the size of your character sprites won't increase the size of your tilesets. You can easily end up with large characters in a tiny map. Either upscale the default tilesets or use tilesets that are already of a higher resolution.

Use the default sprites provided by Paper Maker as a base and draw on top of them using a 3rd party program like Gimp/Photoshop/Clip Studio Paint. I also have a free sprite sheet for download on my Discord that anyone can use.
Because all you have to do is either edit an existing sprite sheet or use it as the base for your custom sprite sheet. There are tons of videos showing how to make sprite sheets so I didn't think I needed to make one. What about making a custom sprite sheet do you not understand?
