I am a canner. Using fresh lemons may be okay for a quick consumption refrigerator jam. BUT, in order to SAFELY water bath can shelf stable jam, you need to use bottled lemon juice. Each fresh lemon has a different acidity and PH. You may not have enough acidity and PH in your fresh lemon to prevent botulism. Bottled lemon juice (like the ReaLemon brand) has the appropriate acidity and PH. Without this acidity and PH you need to pressure can the jam to make it a SAFE shelf stable product. In my opinion pressure canned jam doesn’t turn out the same as the water bath canned jam. With that said I’m so happy that you have so many wonderful figs. Your finished jam looked delicious.
And using the amount called for in the recipe is equally important. But of course, if you're just storing for a short time in the fridge as Janey plans to, or making freezer jam, it's not critical.

My mouth is watering!! What I like to eat with fig jam is toast a bagel smear cream cheese on the bagel then add fig jam to it . Yummy Also thumb print cookies with fig jam.

Will stay good longer in the fridge. Love you all!
My recipe came from a 94 year old lady and it was her mother's recipe; so well over 100 years old. 4 cups figs (cut in pieces), 3 cups sugar, 2 cups raisins, 1 cup chopped pecans, and 3 or 4 slices of lemon (remove seeds and puree in blender). I sometimes use Real Lemon juice instead. In a large pot add figs, sugar, raisins and lemon. Boil until real thick, stirring constantly. Add nuts last. With jars and lids hot, fill and seal as usual; then turn upside down for several minutes. This will help the jars seal. Makes 5 - 6 1/2 pints.
🥹 this brought me so many childhood memories of my grandma who passed away. We had figs, apricot, pomegranate trees and she would make jam out of the figs and apricots.maybe when you learn to can you can gift those during the holidays. Love it for charcuterie boards! And yes you did set my timer for 15 mins 🤣
When it comes to poms, blocky walls are a must, and the flower end will start to curl inward when they are at their peak of sweetness. I like to leave them on the tree as long as possible. They keep better on the tree - at least until it rains. Enjoy harvest season!

My daughters mother in law makes strawberry freezer jam. My husband trades her crappie fish for it. Yes My husband has always fished. We call it strawberry heaven. It's so delicious. Heck yea ice cream and fig jam that’s my jam … never thought of jam over ice cream yummy . My second season for my turkey fig zone 6b don’t think ill ever see my tree that large lol it has to come inside in winter, but my figs tase delicious I’ve had four and four more ripe im giving to a friend but many more yet to ripen. So satisfying to see the tree produce its fruit. Make more jam your family is going to eat it up in a day or two from them look on their faces (what beauties those daughters love their smiles and giggles.) loved this video . Wow what an orchard.
Here’s a thought. Just close your eyes for a second, now picture yourself in the garden in the South of France. You’ve just picked some figs. Put them on your table on the deck and assemble some cheese and a baguette. Voila, a meal!!! Enjoy 😊
Even the North half of France! We live about 16 miles south of Paris and my in-laws have a Fig Tree. It is productive and we eat them off the tree. But much better with some Wine and Cheese and Bread, maybe some apples and grapes!! YUM!

Why don't you take a "Google Lens photo" to determine the type of pomegranates growing in your garden. Then you would be able to accurately research when they should be harvested and how the fruit tree should be maintained.

I have had fig trees for Years. Ants love figs and there is a little hole at the base of the fig. I always open the fig from that hole before eating.

I have found that if you microwave citrus for 20 to 25 seconds it creates twice as much juice. It really works.
I was going to suggest that it would have been good to have Robbie along making his bread to go with the jam but daughters laughing is even better!
