When I make pancakes from scratch I made what I call dutch pancakes without baking powder so then are flat and dense. they are supposed to be small around the size of an eisenhauer dollar coin but I made them as large as I could.

I'm finally disintering my library after a number of years and it is so good to have regained access to my collection. I totally should!! But in the meantime, it's so easy. I just mash some ripe banana and gently stir it into the pancake batter--you don't want the banana to be more than about a quarter of the mix. Then after I pour the batter onto the griddle, I drop on some chocolate chips and peanut butter chips! So good, I don't even eat that kind with syrup--it would be too rich!

I've found that when I flip them, I'll know they're done when I can lightly press the middle of the pancake and it raises back up as soon as I lift my picture. I hope that might help you in the future. :)

Sometimes it's hard to tell until you actually try making a pancake, but over time you get a feel for it. If you're using a mix, it's best to add water gradually--you can always add more if they're too thick. I add some water and stir it slowly and add a little more and stir a little more. (I like my batter so that it's just thin enough to flow into a circle shape, any thicker and they would be an irregular shape.) However, my son wasn't really interested in getting a feel for it, so we figured out through trial and error exactly how much mix and water he needs to make three big pancakes, and he does it just like that each time. I'm happy to share those numbers with you, but they're by weight, not volume. Do you have a scale?
(Sorry, I didn't answer your question about the measuring cup--I always use the same bowl and just know about how much mix goes in, so I don't measure it or use a measuring cup. Next time I'm making pancakes I'll try to remember to figure out how much it is by volume.)

You can also put the batter into a measuring pitcher, like a Pyrex! And I do the same thing with the colliding, especially if I'm using a regular pan. The flat griddle helps.

That's a little harder for me to give directions for because every mix is different. This cooking method is for whatever batter you're using. So if you use box mix, use the directions on the box. If you use a scratch recipe, then you use those directions. The goal is a batter that is thick enough not to spread all over the place, but not so thick that it won't go into a circle. If you're getting kind of an amoeba shape, it's too thick.

Finding the right temperature and batter consistency are most important. I like the batter to be just thick enough to spread in a perfect circle. If it goes to more of an amoeba shape, it's too thick and won't cook all the way through before the outside gets overdone. Too thin and they're a bit tough, they don't really rise. They're all "skin."

Now I mostly use a pan, and I use an inexpensive (like $15) laser thermometer to make sure the temperature is around 400 degrees. When I get a sec I'll try to find a comparable griddle and put a link in the description, along with a laser thermometer and my non-stick pan.

kilo moton Honestly, I'm not very consistent with what I use. I think back then it was a $20 tripod and an iPod Touch. I have a much better tripod now, but often still use the iPod. Sometimes I use better equipment, like my Panasonic Lumix G7, but it doesn't produce better results for this type of thing. For sound, if I'm very close to the camera I just use the camera's mic (or sometimes if I'm far away but lazy or in a hurry). If I'm not right next to the camera and want great sound, I put either an iPod or my phone (Moto Z Play Droid) or my Zoom H4N recorder just out of camera shot. Programs like Adobe Premier can sync the sound up automatically. And last, I try to get some decent lighting going (but again, lazy!). In the end, the important thing is to just start! I think unless you're a beauty blogger looking for a perfect, dewy, glowy look, you'll be fine with whatever you have, and if you do a couple of videos and some aspect is really lacking, you can figure out what it is and upgrade as needed.
Butter burns at the temps I cook my pancakes at. I prefer to put the butter on when I put on the syrup. Mixing butter and oil together gives you a buttery taste that won't burn, but I find that the buttery taste is better when put on after.
I don't remember what that one was, it was super old and I haven't had it for years. These days, since my kids are older, I'm usually only making pancakes for one or two people and I just make them in a non-stick pan on the stove. But any electric griddle will do. I do have a Griddler Deluxe, which is like a panini press that opens flat if you want to make things like pancakes on it, and I love it--I use that when I'm making a bunch. But you don't need something that fancy. A $30 electric griddle will do the job.

Sounds like you aren't cooking them long enough. The key is to have the heat just right so that the inside cooks without the outside burning. You'll have to play around with it a bit. I flip the pancakes when the edges are cooked and a bubble or two has popped near the center and hasn't filled in again.
You know, I can't remember, it was so long ago. Looks like it might have been half a cup, but a lot of it sticks inside so if it was, I'm guessing about 1/3 of a cup actually made it onto the griddle. I have an Oxo bowl now with a pour spout on one side and a rubber grip on the other, so I don't bother with a measuring cup anymore, I just pour it straight from the bowl. In fact, this video is so old that I no longer have that griddle or that cat, either!

Hi Devon, that has to do with how thick or thin the batter is. If it's too thick, they may spread out in an uneven way.

I do have a Griddler Deluxe, which is like a panini press that opens flat if you want to make things like pancakes on it, and I love it--I use that when I'm making a bunch. But you don't need something that fancy. A $30 electric griddle will do the job.

Sounds like you aren't cooking them long enough. The key is to have the heat just right so that the inside cooks without the outside burning. You'll have to play around with it a bit. I flip the pancakes when the edges are cooked and a bubble or two has popped near the center and hasn't filled in again.

You know, I can't remember, it was so long ago. Looks like it might have been half a cup, but a lot of it sticks inside so if it was, I'm guessing about 1/3 of a cup actually made it onto the griddle. I have an Oxo bowl now with a pour spout on one side and a rubber grip on the other, so I don't bother with a measuring cup anymore, I just pour it straight from the bowl. In fact, this video is so old that I no longer have that griddle or that cat, either!
