Thank you for this usefull guide which enabled me to create the image without any real issues. The only difference I noted was that my file was install.esd which I converted with a further command to install.wim and vice versa when I had created it.
you actually don't need to copy the whole Win10 folder. you just need to copy the install.wim file only. after unmount/commit move the install.wim back to where it was ..\sources. great video anyway

You can Install other Softwares while you are creating the reference image. After you prepare your image by removing unwanted provisioned apps(as on this video), then install the prepared fresh OS on a PC/VM. Then install all other needed applications (MS Office, Chrome, etc). Then capture that image using MDT.
