    Have tried to make orange or lemon flavoured honey with just peel?
    Have you any idea how to make rum flavoured honey, just flavour with no alcohol contents at all?

      better late repling than not at all... not ssure how I missed this - however, you can do a citrus honey with peel, extract or essential oil. Rum flavour can be added via actual rum - the 2 will mix but up to a certain amount will make the honey more liquid, almost like a syrup... There are also some rum extracts you can buy and add.

    I’m looking for a saffron honey tea recipe. I’d like to develop one where I can allow a compound flavored honey ( lemon/saffron/cardamom, say) to meld and improve in the jar, then add to hot water. Any ideas?

      better late repyling than not at all... sorry, not sure how I missed this - however, you can absolutely add your flavour to the honey be it saffron, lemon or cardamom, and let it sit and infuse. Then yes, all you need to do is add hot water when you're ready for a flavour beverage!

    Thanks for this. I came here because I wanted to find out how it was done but also whether any jurisdictions like Alberta or Canada regulated production of flavored honeys for sale. Apparently they do. I think mainly due to the moisture some flavorings have. I do see many berries added to creamed honey. Have you dried down saskatoon berries or others for these products?

    Hi, great idea. I was looking for a method to make saffron flavored honey. I don't want to use any essential oil. Do you think I could use whole saffron? Thanks for sharing.

      great question - yes with Saffron you can absolutely add it in and it will extract all the flavour and benefits - and give it a nice colour too!

    Great video, I do have a question though. After you add the flavored oils does the honey need to be refrigerated? Any idea how much it shortens the shelf life? I plan on making some this weekend. Thanks in advance.

      wonderful - so glad and great question, you do not need to refrigerate the honey and in fact is actually best not to, otherwise, it will harden and crystallize. The oil does not alter shelf life at all, so no worries there. Glad you are going to make it this weekend. Have fun and Enjoy!

      this is actually related to CFIA (Canadian Food Inspection Agency) rules about working with honey, and bottling it for resale. May or may not apply to you.
