- I found these damaged cans of Pear Halves on sale for half price. You know me, not wanting to pass up a bargain, I snapped them up and ran them through the freeze dryer.

Just finished a load of diced and sliced pears myself. Didn't waste the syrup by canning it up in mason jars. Also used some of the syrup in my canned applesauce.

John you’ll get better results than you did by washing the heavy syrup (or any syrup, those cans said Heavy) off your canned produce. The syrup is mostly sugar which doesn’t freeze dry very well (as opposed to candy mode which is a different result). So it’s best to wash off the syrup when you can.

Pineapples are a hard one, they take forever but if you have the patience they are worth the wait.
hi john my mtorrs fluctuate.it goes up down.between freezing and drying.but ur saying yours just keep slowly go down to 250mtorr....
When in final dry your mtorrs should not fluctuate as much, the closer to done the less fluctuation.
John, where do you find all these #10 cans of stuff? Sam's where I am at carries a few things in #10 cans but mostly just sauces & condiments etc. Good info on the chamber pressure. I understood that a minimum level vacuum is required to encourage further sublimation during the second phase of the freeze drying process but I was not aware that the vacuum chamber pressure is directly proportional to how much moisture remains in the food.
I think I got these at my local price chopper. Most supermarkets have a very small section of number 10 cans
I am happy when my mTorr stays under500. I don't think I have ever seen mine under 375 maybe 400

@@annwithaplan9766 I am a hands off fd. I put the food in & the machine does what it does. Other than when I had a problem (my machine had to be returned for repairs once.) I seldom notice what my machine is doing, it just beeps when it is done. sorry I could not be of help.

According to a Harvest Right tech I spoke to - anything under 500 is "acceptable" there are a lot of variables such as elevation of the machine, temperature of the room and type of vacuum pump. My machine's best output is about 230 - 240 mTors which ends up as bone dry for my products.
Correct, 500 or below is fine. If I added time until it dropped to 250 mTorr, I would still be on my first batch from last year. My food dries just fine and I've never seen the mTorr below 428, and most of the time it doesn't get below 470. My machine is a large, and when I've noticed the mTorr under 300 on videos it's always a medium freeze dryer. Could be vacuum chamber size for the mTorr variability.
I don't think they would've disintegrated if you washed them off. I just let mine drain in a colander and/or paper towel. You could get two levels in the same tray by using a wire rack. I've seen that done and am going to get some soon myself.
I have heard you should wash them off b4 you freeze them.
