Chef I am a line cook po sa Nordstrom Restaurant dito
Po sa Washington and mga kasama ko po mga mexican lahat. I am the only filipino po in the kitchen. When Filipino and mexican work together iba po ang awra at ang team work grabe, masaya po. Seeing this video makes me really happy and proud po. Sa lahat po ng videos nyo grabe nakaka proud po. Thank you chef. Hope to meet u po one day.

I know the common understanding is that the Philippines was ruled by Spain but technically the Philippines was initially under Spain but it was ruled through the viseroyalty of New Spain AKA Mexico until Mexico gained their independence in 1821. So sharing our food with the Mexicans is like cooking for our older brother and his family!

When I was still working in the hospitals , my co workers and friends were Mexicans. They love the Filipino foods. We always shared our foods with them and they loved them. I enjoyed working with them. They’re friendly and easy to talk with them. I love
    them all.

This should be Chef JP's main format - just galavanting the world and cooking at his friends' restaurants while exploring the local culture. There aren't too many other youtube channels that cover content like this just because of the logistical challenges and the fact that most people don't have a network of chef friends all around the world.

The Philippines was colonized by Spain but we are not very close to them, our closeness to Mexico is stronger because of the Manila-Acapulco, Mexico trade in the 18th century. The same goes for other Latinos like the Dominican Republic and Cuba.

20:46 I think Jefe is addressing everyone in the Philippines (todos las Filipinas) and when he said "desde Manzanilla Mexico" it translates to "from Manzanilla Mexico".
American restaurants won't run without Mexican immigrants. They are definitely the backbone of that industry. Not only American kitchens but also American farms. Mexicans not only cook America's food they also grow America's food.
That bearded chef, when he shakes his hand after tasting the food I can almost hear him say, "Ay, Chingon!" 😂😂😂
