As much as I love these videos that beef definitely did not render down all its fat. If I make this I'll be definitely trimming the beef a lot more before cooking.
Love your one pot and traditional recipes mate. I am struggling to find the right bay leaves though. I'm in Hanley and have been the local Asian shops but I can't seem to find them

I can taste that rendered beef fat. Delicious.
Brisket seems an odd choice. It didn’t look like the fat rendered.
I thought the process a bit odd, but depends on cooking time I suppose.
