King Cake|French New Year Dessert, who will be the king?

- Bonjour! Today I will show you how to make a traditional French New Year dessert - Galette des Rois! This dessert is not only crispy and sweet, but also has a fun tradition: the little porcelain doll (or bean) hidden in the cake determines who will become the king or queen! Material preparation:
🍰 Fillings:
*Almond flour 125g
125g butter (cut into small pieces, softened at room temperature)
2 eggs
Sugar 100g
🍯 Sugar water:
50g sugar
50g water
🥚 Brush the cake surface:
1 egg yolk
🥧 Pie crust:
2 pieces of mille-feuille pie crust (homemade or commercially available, see another video "How to make mille-feuille pie crust" for details)
Production steps:
1️⃣ Make sugar water:
Put 50 grams of water and 50 grams of sugar into a pot together, cook over low heat until the sugar is completely melted and becomes sugar water, turn off the heat and let cool until set aside.
2️⃣ Prepare the almond cream filling:
Cut 125g of cream into small pieces, mix with 100g of sugar, and beat with a whisk until the cream is fluffy and slightly lighter in color.
Add two eggs one at a time, mixing well each time before adding the next one until completely combined.
Finally, add 125 grams of almond flour and mix well to form the almond butter filling.
3️⃣ Assemble the king cake:
Place a piece of puff pastry pie crust on a baking sheet.
Spread the almond cream filling in the center of the pie crust, leaving about 2 cm around the edge without filling.
(Small easter egg) Hide a small clean porcelain doll or bean into the filling. This is the tradition of King Cake!
Cover with the second piece of phyllo pie crust and press the edges with a fork to prevent the filling from leaking out.
4️⃣ Brush with egg yolk and decorate the pie crust:
Brush the surface of the pie crust with egg yolk, and then use the tip of a knife to gently score radial or other patterns you like (be careful not to cut through).
5️⃣ Baking:
Preheat oven to 200°C.
Place the king cake in the oven and bake for about 20-25 minutes, until the surface is golden brown and crispy.
6️⃣ Sugar water to brighten:
After baking, brush a layer of sugar water on the surface of the cake while it is hot to make the cake more shiny and look as luxurious as a crown.
King cake is done!
