Actually the sauce with the veggies are for the fried/grilled fish. For the beef lok lak, the sauce that goes with it should be a lime, salt and black pepper dipping sauce. And usually the beef sticks usually/should come with pickle carrots and daikons/papaya.
Also for the curry, it is normally eaten with either the rice or rice noodles like you did or dip it with a French baguette as well.

In regards to the fried fish.., You are supposed to wrap up a piece of the fish with the noodles, herbs and veggies together and dip it in that tamarind sauce. Beef lok lak should be dipped in a lime and pepper sauce. Great job showcasing Khmer cuisine! Much love ❤️
