Molly Makes Classic Caesar Salad | From the Test Kitchen | Bon Appétit

  • A great Caesar salad recipe gets its swagger from a great Caesar dressing recipe. Squeamish about raw egg yolks and anchovies? Sorry. Yolks are what give richness to the emulsion, while anchovies provide a briny blast (and that whole umami thing). Learn how to make BA's best classic caesar salad with Molly Baz!

    • @bloodgain
      @bloodgain 5 ปีที่แล้ว +36

      Where are you buying your Parm? A chunk of real imported Parmigiano-Reggiano that size should go for like $15-20 tops, and it goes a long way. You can buy a much smaller piece for a few bucks and just buy it as you need it. Personally, I mostly stick with Pecorino-Romano, which is a similar cheese, but a bit sharper and slightly cheaper. I just buy a small chunk of Parm if I need it for a specific purpose. There's also Grana Padano, which is like a milder Parmesan, but high quality and less expensive than real Parm.

    • @cochbob

    I really like this hearty recipe, almost a 'steak and potato' version of the Caesar. I like that it's not flimsy.
    The grilled romaine is like the 'steak' and the croutons act as 'baby potatoes'. The dressing looks so delicious and sufficiently full bodied.
    I want one 👍

    I think the grilled Romain is awesome, you lightly wilt the outside while retaining that proper crunch in the middle. Not to mention if you are pairing this salad with a steak (as you should) it will pick up some of that flavor off the grill.

      a slight change in technique/ingredient doesn't change the name of the dish entirely.
      People often use heavy cream in carbonara when the classic doesn't have one but still call it classic. Whats your point

    • @pike666db
      @pike666db 4 ปีที่แล้ว +1

      "oh yeah! let's add dubstep bass drops to Stairway to Heaven. you know, to add our own twist... we'll still call it classic rock, though". talk about missing the point, when the actual definition of classic is to follow a method or standard to a long-established practice. nothing wrong with creative twists but don't kid yourself calling classic something that is not.
