We use an egg to bind the filling and we dont put coriander or nutmeg in but we use sage and rosemary and the pastry should be shortcrust. You did a good job, glad you liked them. 💖
The reason why Gregg's sausage in their sausage rolls is extremely pink, is because there is hardly any meat content, it is mostly blended up pig skin and water. It's a little sad these days when people have had so little experience of real sausage rolls (such as those made in this video) that they would even consider what Gregg's make to be a sausage roll. Also, a 'freshly baked in store' sausage roll from Gregg's doesn't mean what most people think it means, it doesn't mean made from scratch with fresh ingredients, it means taken frozen from a delivery freezer and shoved in an oven for half an hour. Gregg's are not a bakery in a traditional sense. Only the sandwiches are prepared in store but even the bread is delivered in, not made in house. all the cakes, cheese straws, Donuts are mass factory produced and brought in. The only reason the sausage rolls and pasties are cooked, from frozen, in house is so that Gregg's can use the term 'bakery'. If they didn't do that, nothing would be cooked in store.

(STILL going through all your videos!) I always coat the top of my sausage rolls with Colman's Mustard (which I'm sure you've had). I have fond memories when I was a child; every Saturday morning, my Grandad would drive the two of us to the next (bigger) town over, we'd look around the shops then pop into the local bakery at the end, get two hot, fresh sausage rolls each, take them back to the car, and coat them in the little glass pot of Colman's Mustard we brought with us. Happy times. And simpler times.
Jess we have a food chain called Morrisons and they do fantastic sausage rolls and pastys and pies. Go early in the morning when they are fresh 😀. They do combinations like bramley apple and pork or stuffing, pulled pork.
K_JS chucky I agree that Morrison’s supermarkets have some excellent food and their meat and fresh fish counters can’t be beaten apart from a sole trader store. Might cost a bit more but the taste and quality far far out weigh the extra cost .......

In the UK you can buy tubes of seasoned sausage meat which has been cured. You can also use your favourite sausages. I make one big sausage roll and add a couple of chopped boiled eggs and a very little powdered English mustard in the mix. I also put grated cheese either in the mix or on top of the pastry.

Another good one is bangers with bubble and squeek! Which is basically sausages served with fried potato and cabbage mixture. It used to be a Monday left overs meal.
Before baking once you've egg washed the tops of the sausage rolls try a sprinkle of fennel seeds before baking , lovely, also for a festive addition try chopped red onion and dried chopped cranberries in the sausage meat ....really tasty

We wouldn't normally add onions to the sausage meat. That said it seems like a great idea, I'll be trying it next time. Also, if you make sauage meat again, and you can get it, try mace in the mix. It's a traditional spice in many British sausages.
Look great! Look exactly like home made sausage rolls. I usually get pork shoulder, belly and bacon and mince them at home along with some extra suet (why scrimp when they're calorific anyway!). I'd also add some rosemary and a bit of sage but not too much so it doesn't overwhelm. At Christmas I make a festive version that has Stilton and dried cranberries in too (sometimes a bit of stem ginger too!)

For the meat I use Lamb mince or chicken mince and use frozen filo pastry and for the sauce I have BBQ sauce, or HP sauce, those ones u made look identical to the ones I make too. Love your recipes and video's!
I was a baker for 22 years and for 10 years of that i worked for one of the top family barkers in England, my boss would use 50 pounds of sausage meat a day making sausage rolls, using the puff pastry i made, because i was a pastry baker. i would make 12, 24 lb sheets of puff pastry a day. But we never put onion in our sausage rolls.

There’s a restaurant/cafe in the UK called Greggs and their sausage rolls are legendary, and they’ve even recently brought out a vegan sausage roll which is yum! Next, you must try a Cornish pasty!!
HP sauce was invented by a grocer who also ran a breakfast bar in Nottingham, England. He marketed it as "The sauce they eat in the Houses Of Parliament" which was a complete lie, hence the name and the picture on the bottle. Nice video as usual.
Sausage rolls are my most favourite food ever. I am from the UK but live in Thailand. Sausage rolls are the only food I miss. Excellent recipe - as always! I always add sage to the meat. If you don't have fresh sage, a bit of dried sage that's had a splash of white vinegar on it for five minutes works just as well. For a vegetarian version, you use thickly mashed/creamed potato (lots of butter but only a touch of milk to loosen it) onions, Coleman's mustard (teaspoonful) and a good strong, grated cheddar cheese.Mix it all together and add a bit of salt and pepper and any other herbs and spices you like (I always add a touch of chilli powder - enough to add warmth rather than an over powering heat). You let it go cold then make sausage shapes, and wrap in pastry just like a sausage roll and bake the same way. I know the recipe I've given you is a bit hit and miss, but basically you experiment with it until you get it the way you like it. For an old school traditional foodstuff, I'd suggest a suet pudding. The best one to start with is probably a Sussex Pond Pudding> There aren't too many ingredients and it gets you used to using suet as an ingredient. Google Felicity Cloake Guardian and Sussex Pond Pudding for probably the most reliable recipe I've found for it.

Good job on the sausage rolls, they tend to be fairly versatile so you end up collecting a few recipes, so you can really mix up the flavours and try new things with them. I've got about a dozen recipes which vary wildly in flavour, my family like my turkey and apricot sausage rolls. If your exploring the realm of British dishes then you have to visit pies and pasties.
I'm from the UK, they look great. Always best with tomato sauce. Lol Have you tried cornish pasties or even a Bedfordshire clanger! The latter is meat one end and apple or jam the other end. A local delicacy. 😍
There is a mining area a few hours away from us that was settled by welsh immigrants, there are 2 pasty shops there, we always stock up when we are nearby! But making my own is on my list! Not sure I would like the sweet/savory one, i don't really like mixing my food! ❤Jess

Sausage Rolls are the best comfort food,.......try these with the onion caramelized in the sausage meat. (Not crispy and Slow cook onions for like 40 min on a low temp so they are soft and really sweet....dont add salt yall find a recipe online) also another great flavour is chilli and tomato added to the meat. 👍
We use Lincolnshire sausages as it as the all the ingredients already and use crusty brown bread as it contains more flavour and use a just the yolk of the egg as water takeaway the flavours and back I the day we didn’t have puffy pastry we use short crust pastry very easy to make if you can’t get hold of that kinda of sausage use any herbyb sausage you can get you will see a massive difference
Hi Jess, sausage rolls are like a meat loaf recipe where everyone has their own favourite way of making them, seasoning and what percentage of meats to use. I use a 2/3 pork 1/3 beef myself and use fresh herbs rather than the dried ones you used. I do have a small herb garden so that’s why I can. As to other recipes you can try, bread and butter pudding is one that’s popular and another is a clootie dumpling. The dumpling is rich and very moorish, sometimes served at special occasions with coins wrapped in paper in it for luck and served with a brandy custard (as it’s a special occasion one) or just a normal custard of kids are eating it too. I love it and I’d be happy to give you a recipe for it if you want to give it a go ! Keep up the good work, love to you all including the rest of the family too ! X

Oh the smell when they are baking the stuff is heavenly and tempting. I used to buy the nutty bread but then they changed the recipe.

Or a bit of milk brushed on top before going in the oven. Helps if you have a pastry brush.

Straight from the oven is great but if any survive, they make a tasty addition to a picnic basket.

You should pour over an instant gravy, such as Bisto gravy granules..... delicious!
Excellent recipe - as always! I always add sage to the meat. If you don't have fresh sage, a bit of dried sage that's had a splash of white vinegar on it for five minutes works just as well.
For a vegetarian version, you use thickly mashed/creamed potato (lots of butter but only a touch of milk to loosen it) onions, Coleman's mustard (teaspoonful) and a good strong, grated cheddar cheese.Mix it all together and add a bit of salt and pepper and any other herbs and spices you like (I always add a touch of chilli powder - enough to add warmth rather than an over powering heat). You let it go cold then make sausage shapes, and wrap in pastry just like a sausage roll and bake the same way.
I know the recipe I've given you is a bit hit and miss, but basically you experiment with it until you get it the way you like it.
For an old school traditional foodstuff, I'd suggest a suet pudding. The best one to start with is probably a Sussex Pond Pudding> There aren't too many ingredients and it gets you used to using suet as an ingredient.
Google Felicity Cloake Guardian and Sussex Pond Pudding for probably the most reliable recipe I've found for it.

Good job on the sausage rolls, they tend to be fairly versatile so you end up collecting a few recipes, so you can really mix up the flavours and try new things with them. I've got about a dozen recipes which vary wildly in flavour, my family like my turkey and apricot sausage rolls. If your exploring the realm of British dishes then you have to visit pies and pasties.

Have you tried cornish pasties or even a Bedfordshire clanger! The latter is meat one end and apple or jam the other end. A local delicacy.

There is a mining area a few hours away from us that was settled by welsh immigrants, there are 2 pasty shops there, we always stock up when we are nearby! But making my own is on my list! Not sure I would like the sweet/savory one, i don't really like mixing my food! ❤Jess
@@BigJonTV the mixed one is two definite ends. Original pasties were like it so you got lunch and pudding. Sometimes people seperate the two ends with a piece of pastry. 😋

Sausage Rolls are the best comfort food,.......try these with the onion caramelized in the sausage meat. (Not crispy and Slow cook onions for like 40 min on a low temp so they are soft and really sweet....dont add salt yall find a recipe online) also another great flavour is chilli and tomato added to the meat. 👍

How do yours differ?
We use Lincolnshire sausages as it as the all the ingredients already and use crusty brown bread as it contains more flavour and use a just the yolk of the egg as water takeaway the flavours and back I the day we didn’t have puffy pastry we use short crust pastry very easy to make if you can’t get hold of that kinda of sausage use any herbyb sausage you can get you will see a massive difference
Hi Jess, sausage rolls are like a meat loaf recipe where everyone has their own favourite way of making them, seasoning and what percentage of meats to use. I use a 2/3 pork 1/3 beef myself and use fresh herbs rather than the dried ones you used. I do have a small herb garden so that’s why I can.
As to other recipes you can try, bread and butter pudding is one that’s popular and another is a clootie dumpling. The dumpling is rich and very moorish, sometimes served at special occasions with coins wrapped in paper in it for luck and served with a brandy custard (as it’s a special occasion one) or just a normal custard of kids are eating it too. I love it and I’d be happy to give you a recipe for it if you want to give it a go ! Keep up the good work, love to you all including the rest of the family too ! X
