It's just like all the previous owners of your house... Sometimes you have to readjust your plans. Plan B or C could be better then plan A. Don't stop, the progress it's amazing.😊

Have you watched utube The Pethricks, Simon their plasterer did the boarding between beams and gave excellent tips and uses of tape etc. Worth watching to resolve your worry. Hope it helps.
I was thinking the same thing. They put battens up and screwed the drywall to it. Doing it that way will allow the insulation to keep the air gaps. Smashing it to the ceiling will decrease it’s effectiveness

Where the drywall meets the beam and there is a gap, have you considered affixing quarter-round molding to cover the gap?

It's about time you did this room! I have loved this room since we first saw it with the disgusting bed and the wardrobe with all the old clothes in it. With the three windows it is one of the best in the house! Cannot wait! You need a really comfortable room to relax in!

You are supposed to put batons on first then nail the drywall on and finally plaster.
I disagree. Batten is required for the concrete walls or concrete ceilings like in a modern apartments, and needed only as a structure to install drywall on. In our case we already have the appropriate structure - ceiling itself.

It is a horrible job, we have done the same job in our home. Just stick with it, you will get there. 😁
