Curd, also known as yogurt, is considered to be beneficial for health due to its nutritional content and potential health-promoting properties. Here are some reasons why curd is considered good for our health:
    1. Probiotics: Curd is a natural source of probiotics, which are beneficial bacteria that can help maintain a healthy balance of gut microflora. These probiotics, such as Lactobacillus and Bifidobacterium, can improve digestion, boost the immune system, and enhance nutrient absorption.
    2. Digestive health: The live cultures present in curd aid in the breakdown and absorption of nutrients, making it easier for the body to digest and assimilate food. This can be particularly helpful for individuals with lactose intolerance since the bacteria present in curd can partially digest lactose, the sugar found in milk.
    3. Nutritional profile: Curd is a good source of essential nutrients, including protein, calcium, vitamin B12, phosphorus, and potassium. Protein is important for tissue repair and growth, while calcium is crucial for strong bones and teeth. Vitamin B12 is necessary for nerve function, and phosphorus and potassium are vital for various physiological processes in the body.
    4. Weight management: Curd can be a valuable addition to a weight loss or weight maintenance diet. It is low in calories and high in protein, which can increase satiety and help control appetite. Additionally, the calcium in curd may play a role in fat metabolism.
    5. Improved immunity: The probiotics found in curd can enhance the immune system by stimulating the production of antibodies and promoting the activity of immune cells. A strong immune system is crucial for defending the body against infections and diseases.
    6. Bone health: The combination of calcium, phosphorus, and protein in curd makes it beneficial for maintaining healthy bones and preventing conditions like osteoporosis.
    7. Heart health: Some research suggests that consuming curd regularly may contribute to heart health. The probiotics in curd may help lower cholesterol levels and blood pressure, reducing the risk of cardiovascular diseases.
While curd has numerous health benefits, it's important to note that individual responses to food can vary. If you have specific dietary concerns or health conditions, it is always a good idea to consult a healthcare professional or a registered dietitian for personalized advice.

    Friendly Microorganisms
    Microorganisms are used for various
purposes. They are used in the
preparation of curd, bread and cake.
Curd contains several microorganisms. Of these, the bacterium,
    Lactobacillus promotes the formation
of curd. It multiplies in milk and
converts it into curd. Bacteria are also
involved in the making of cheese,
pickles and many other food items. An
important ingredient of rava (sooji )
idlis and bhaturas is curd. Can you
guess why? Bacteria and yeast are also
helpful for fermentation of rice idlis
    and dosa batter.
    Fig. 2.5 : Viruses
    I saw that my mother
added a little curd to warm
milk to set curd for the
    next day. I wonder why?
They are also used in cleaning up
of the environment. For example, the
    organic wastes (vegetable peels, remains
of animals, faeces, etc.) are broken
    down into harmless and usable
    substances by bacteria. Recall that
bacteria are also used in the
    preparation of medicines. In agriculture
they are used to increase soil fertility
    by fixing nitrogen.
